  • 4 cups bread flour
  • 4 tsp kosher salt
  • 2 tsp active dry yeast
  • 13 oz water
  • 2 tbsp olive oil

Instructions
 

  • Combine the flour, salt, and yeast into a large bowl and whisk or stir until thoroughly combined. Add water into the mixture with your hands until no dry flour remains on the bottom of the bowl.
  • On a heavily floured surface, knead the dough for about 10 minutes, pulling the dough away from you and folding it back over itself until it becomes smooth. Form the dough into a ball and place in a bowl coated with 2-3 tablespoons of olive oil.
  • Cover the bowl with plastic wrap or a towel and refrigerate, allowing the dough to rise overnight. If you are using the dough that night you can let it rise at room temperature for about an hour and the dough will roughly double in size.
  • Once the dough has risen, turn out onto a lightly floured surface and divide into four even dough balls. Allow these to rise for an additional 1-2 hours if you plan on making pizza right away. Otherwise, place in ziplock bags to freeze for your next pizza night.

  • 1 lb elbow macaroni
  • 6 tbsp unsalted butter
  • 5 tbsp all purpose flour
  • 2 1/2 cups milk
  • 2 cups grated cheese (sharp cheddar cheese & mozzarella cheese make a great blend)
  • 1/2 tsp salt
  • 1/4 tsp mustard powder optional
  • 1/2 cup bread crumbs

Instructions
 

  • Preheat your oven to 400F degrees. Grease a 9x13-inch baking casserole dish with butter.
  • In a large pot, bring salted water to boil and cook the elbow pasta until al dente. Drain and set aside.
  • In a large saucepan, melt butter over medium heat to start the roux. Add in the flour and whisk until a thick, smooth paste is formed. Cook for about 2 minutes.
  • In a separate bowl, warm the milk in the microwave and then slowly whisk into the roux. Cook the sauce over medium heat until thickened, about 5 to 8 minutes. Stir slowly while the sauce thickens and be sure to scrape the bottom of the pan. Remove the pan from the heat and stir in the shredded cheese one handful at a time. Stir in the salt and optional mustard powder after the cheese has fully melted.
  • Transfer the cooked pasta to a large mixing bowl and pour the sauce over the pasta, stirring gently until the pasta is evenly coated. Transfer the pasta to the greased baking casserole dish and sprinkle the top with bread crumbs. Bake the pasta until bubbly and golden brown about 15-20 minutes. Serve immediately.

  • 2 cups graham cracker crumbs
  • 5 tbsp unsalted butter melted
  • 1/4 cup granulated sugar

  • 4 8 oz blocks of cream cheese full fat
  • 1 cup sugar
  • 1 cup sour cream full fat
  • 1 tsp vanilla extract
  • 2 1/2 tsp fresh lemon juice
  • 3 large eggs

Instructions
 

Crust

  • Preheat the oven to 350F. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar with a spatula until combined into a coarse, sandy mixture. Press the mixture into the bottom of a 9-10 inch pan. Make sure the mixture is tight and compact in the pan. Prebake the crust for 7-8 minutes.

  • Preheat the oven to 350F. In a large bowl, beat the room temperature cream cheese and granulated sugar together on medium high speed with a handheld mixer until smooth and creamy, about 2 minutes. Add the sour cream, vanilla extract, and lemon juice and beat until thoroughly combined. On medium speed, add in the eggs one at a time. After the final egg is mixed into the batter, stop mixing. Over-mixing is the number one mistake you can make with cheesecake!
  • Prepare the water bath. Boil a pot of water, about 1 inch should coat the roasting pan you plan on placing your cheesecake in. While the water heats up, wrap the springform pan with aluminum foil and pour the batter on top of the crust. Place the pan inside the large roasting pan, then pour the hot water inside the pan and place in the oven.
  • Bake cheesecake for 55 to 70 minutes or until the center is almost set. Turn off the oven and leave the door slightly open. Allow the cheesecake to rest in the water bath and cool for 1 hour.
  • After 1 hour, remove from the oven and water bath and let cool completely at room temperature. Then refrigerate the cheese overnight. The next day, loosen the cheesecake with a knife and use a knife dipped in warm water between each slice to ensure precise, clean cuts. Serve with mixed berry coulis and fresh berries, chocolate, or whatever you love on top!

  • 3/4 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar

  • 1 pie crust refrigerated
  • 6 large eggs
  • 3/4 cup half and half
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups cooked ham chopped
  • 1 cup mozzarella cheese shredded
  • 1 cup cheddar cheese shredded
  • 4 tbsp scallions (green onions)

Instructions
 

  • Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
  • In a large bowl, mix together eggs, half and half, salt and pepper.
  • Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
  • Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
  • Once the center is completely set, let cool for 5-10 minutes before slicing and serving. Serve warm or at room temperature.
