  • Flank steak – You’ll need 2lbs of it. Go to the butcher for the best cut. It’s worth it.
  • Carne Asada Marinade – To make the carne asada marinade recipe, you’ll combine extra virgin olive oil, fresh chopped cilantro, sugar, lime juice, minced garlic cloves, soy sauce, chili flakes, diced jalapenos, onion powder, cumin, apple cider vinegar, and ground black pepper together to make it. You will not need a carne asada seasoning with you use this marinade.
  • Corn tortillas – So you have a vessel to bring all this deliciousness to your mouth!
  • Toppings – Fresh chopped cilantro, chopped avocado (or even guac!), thinly sliced radishes, shredded lettuce, and lime wedges are all great toppings though feel free to get creative here!

Put your steak in there and coat it well, letting it marinate in the fridge for a minimum of 2 hours to no more than 4 hours. After marinating, let the steak come to room temperature. Then heat your skillet over high heat and sear the steak on both sides, roughly 2 to 3 minutes per side so it browns. Lower the heat and cook to your desired level of doneness, then let the steak rest for 10 minutes. Slice across the grain and serve with those tortillas and toppings.

  • 1/2 cup extra virgin olive oil
  • 1 cup fresh cilantro (chopped)
  • 1 1/2 tbsp sugar
  • 1 1/2 tbsp lime juice
  • 6 garlic cloves (minced)
  • 1/4 cup soy sauce
  • 2 tsp chili flakes
  • 2 jalapenos (diced)
  • 1 tsp onion powder
  • 2 tsp cumin
  • 2 tbsp apple cider vinegar
  • 1 1/2 tbsp ground black pepper

Toppings

  • fresh cilantro (chopped)
  • avocado (chopped)
  • lime wedges
  • corn tortillas
  • 5 radishes (thinly sliced)
  • 1 cup lettuce (shredded)

Instructions 

  • In a large mixing bowl, whisk the olive oil, soy sauce, lime juice, apple cider vinegar, sugar, black pepper, and cumin. Add in the garlic, jalapeno, and cilantro. Place the steak in the marinade and coat thoroughly. Allow the steak to marinate in the refrigerator for at least 2-4 hours.
  • Once the steak has been fully marinated, remove the steak from the fridge and allow it to reach room temperature.
  • In a skillet on high heat, sear the steak on both sides, about 2-3 minutes on each side, forming a brown crust. Lower the heat and continue to cook the state until it reaches about 10 degrees from your desired doneness and remove from heat (About 120F degrees for medium at 140F). Allow the steak to rest for about 10 minutes. Slice the steak across the grain and serve with desired garnishes.

  • 1 lb fresh strawberries (chopped)

  • 12 oz blueberries
  • 12 oz red grapes (sliced in half)

Christmas time in Puerto Rico means Coquito's for all! This rich and creamy Coquito recipe is the perfect coconut and rum drink that is the traditional Puerto Rican drink served for the holidays. Think of it as Puerto Rico's take on eggnog. Yumm!

  • 2 cups dark rum
  • 3 oz raisins
  • 3 cinnamon sticks
  • 14 oz can coconut milk
  • 15 oz can coconut cream
  • 14 oz can sweetened condensed milk

  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg

Instructions

  • 1 lb lean ground beef (80-90% lean)

  • 2 large eggs (beaten)
  • 3 tsp ketchup

  • 2-3 sprigs fresh thyme

Instructions 

  • Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  • In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest).
  • Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.

  • 2 1/4 cups granulated sugar

This easy lentil soup recipe blends so many unique flavors together that are perfectly balanced and come out delicious every time! When the weather starts to get chilly this is the perfect soup to warm up the family and makes great leftovers.

Ingredients

  • 3 tbsp olive oil
  • 1 large yellow onion (chopped)
  • 2 tbsp garlic (minced)
  • 2 large carrots (chopped)
  • 3 celery ribs (chopped)
  • 2 bay leaves
  • 1/2 tsp crushed red pepper flakes
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 14 oz crushed tomatoes
  • 2 cups brown lentils (rinsed and drained)
  • 7 cups chicken stock
  • 1/3 cup lemon juice
  • zest from one lemon
  • salt (to taste)
  • black pepper (to taste)
  • fresh parsley (chopped for garnish)

Instructions 

  • In a large pot on medium to medium-high heat, heat the olive oil. Once heated through, add the garlic and onion until fragrant. Next, add in the celery and carrot and cook until softened. Once the celery and carrot have softened, add in remaining ingredients except for the lemon juice, zest, and salt. Bring the entire pot to a full simmer. Cover the pot with lid and simmer for 35-40 minutes or until the lentils are cooked through. Once the lentils are cooked through, be sure to remove the bay leaves. Add in the lemon juice, zest, and salt. Garnish with parsley and serve with crusty bread.
