Once upon a time, I used to buy those processed food kids. You know the ones. They promised delicious sides in no time. They have all kinds, including ones with potatoes. And then, I found out what was in them and needless to say, I found it was not only healthier but also tastier to make potatoes with ones I got from the produce department. This recipe ensures you’ve got tender, flavorful potatoes to go with your best meals.

Ingredients for making roasted potatoes

Ingredients in Roasted Potatoes

  • Red potatoes – you could use any potatoes, but with the red ones, you don’t need to worry about peeling. You can also substitute Yukon gold potatoes or russet potatoes if you do not have red potatoes.
  • Garlic – mince your own for the best taste.
  • Olive oil – a healthy fat to help the potatoes roast.
  • Seasonings – a bit of Italian seasoning, red pepper flakes, sea salt, black pepper, and smoked paprika is all you need to give these potatoes zing. If you do not have Italian seasoning you can simply use parsley, thyme, or other fresh herbs for a simple and delicious flavor.

You don’t need to wait for a holiday to make this green bean casserole recipe. In fact, it’s easy enough to make for any dinner. Let it be Christmas in July or a Sunday dinner on a Monday night. It’s the family favorite recipe the whole family loves every time!

Best green bean casserole recipe

Best Green Bean Casserole Recipe

This is the best green bean casserole recipe that makes those family-style flavors so perfectly. It’s the perfect Christmas or Thanksgiving holiday side dish and delicious every single time!

Easy Green Bean Casserole Recipe

It’s funny because I used to think green bean casserole was such a hard dish since it was always in my mom and grandma’s holiday lineups. But it takes only 8 ingredients and 35 minutes from start to finish so you can make this any time.

Ingredients for making green bean casserole

Ingredients in Green Bean Casserole

  • Green beans – use canned for a softer texture or fresh green beans (boil first) for a firm texture. I prefer canned for this recipe.
  • Mushroom soup – the canned cream of mushroom works great but…
  • Heavy cream – if you mix it together with heavy cream, it takes it to a whole new level of creamy deliciousness. Its almost like a creamy mushroom sauce!
  • Crispy onions – you’ll add these french fried onions in the casserole and on top for plenty of texture and flavor. Fried onions are the best option here but if you must, you can substitute panko or breadcrumbs.
  • Cheddar cheese – who can resist more cheese? I’ve also done a blend of half cheddar half Parmesan cheese that was delicious.
  • Seasonings – smoked paprika, salt, and black pepper give this a more refined taste. A dash of garlic or celery salt can also add a good flavor.

Easy green bean casserole recipe

How do you Make Green Bean Casserole from Scratch?

It really couldn’t be easier. You’ll start by mixing the cream of mushroom soup with the heavy cream. Then you’ll add in the drained green beans, seasonings, and crispy onions. You’ll top it off with a layer of the cheese and then more crispy onions, bake, and then serve.

Expert Tips and Tricks for the Perfect Green Bean Casserole Every Time

  • Use heavy cream. The cream of mushroom soup isn’t enough to make it as rich as you’d like. With heavy cream, everyone will want to know why your green bean casserole is so incredible.
  • Dislike mushrooms? You can use a different cream soup. Again, don’t skip the heavy cream though!
  • You can make it ahead so you can just bake it the day you plan to serve it. Leave the crispy onions out of it though until you’re ready to bake or they’ll get soggy and gross.

“Oh fudge.” My favorite line from A Christmas Story. Also, what I said to myself when I realized that I hadn’t made fudge in a while. The kids reminded me and so we whipped up a batch together. It’s dangerously good and because it’s so easy, perhaps even more dangerous. No need for a lot of fuss, but if you want fudge to indulge with or to make as gifts for someone sweet, this fudge recipe has your back!

Best fudge recipe

Best Fudge Recipe

What makes the best fudge recipe? I’d say that rich, chocolate fudge texture and taking barely any hands-on time to make. This one tops it off with nuts, but if you have nut allergies (or just don’t want them in your fudge) you can leave them off.

Ingredients for making fudge

Ingredients in Fudge

  • Chocolate chips – semi-sweet gives just the right amount of chocolaty goodness.
  • Sweetened condensed milk – adds a creaminess to your fudge and gets it to that right texture.
  • Butter – helps form the bonds of fudge and create a cream-y texture.
  • Vanilla extract – adds depth to the sweetness with vanilla contrast.
  • Chopped nuts – pecans and walnuts are added at the end (though they can be omitted if you’d prefer).

The only hard part about making homemade fudge is waiting for it to set. It takes only a few minutes to make. After pouring it though, you have to remain patient until it is fully chilled.

How do you make fudge from scratch

How do you Make Fudge from Scratch?

You simply melt the ingredients together on the stove top until they get the right smooth texture, then pour into a lined and prepared baking sheet. Add the nuts if you desire. Pop it in the fridge to chill and then remove the aluminum foil for easy cutting. That’s all there is to it!

Expert Tips and Tricks for the Perfect Fudge Every Time

  • Choose the right butter – You can use salted or unsalted butter, though using salted gives it a bit of contrast, like salted caramel. If you’d prefer to enjoy the richness of chocolate, choose unsalted butter.
  • Don’t over-stir the fudge. While you want to keep stirring while the chocolate chips melt, it’s overkill after that.
  • Slick trick – You can spray the aluminum foil with cooking spray for easy removal. This way, you can be sure no fudge gets stuck on there.

What is the secret to making fudge

What is the secret to making fudge?

A heavy bottom pan always helps in evenly heating your fudge ingredients. Also, be sure to use real vanilla extract. It’s far superior to imitation.

Could I use evaporated milk rather than condensed milk for fudge?

No, that is not recommended. Evaporated milk and condensed milk are two very different products so make sure you use the sweetened condensed milk in your fudge.

How long should you beat fudge?

Only stir your fudge enough while the chocolate chips are melting to keep it from sticking and burning on your pan. Once it becomes a smooth and melted mixture, it’s time to stop.

Can I use evaporated milk instead of condensed milk for fudge

How Long Do I Boil Fudge?

It will take roughly 10 minutes to melt the ingredients on your stove top. Look for the chocolate chips to completely melt and become smooth before removing from the heat.

Can I bake fudge that didn’t set?

No, you’ll need to heat the mixture back over the stove top once again to get it right. If you keep having trouble, a candy thermometer can help. You can also check that it’s ready by seeing if it forms a soft ball when you put a drop of it in cold water.

What to Serve with Fudge

We love fudge all on its own, though you can serve it with fresh berries and other fruits to balance out the chocolate flavors. Strawberries and raspberries definitely go best, but choose what’s seasonal and fresh. The kids love marshmallows on their fudge. Another perfect partner? Wine! A nice Syrah or a ruby port should do the trick.

How to Store Fudge

Fudge can be kept out on the counter as long as it is contained in an airtight container. If you’d prefer it chilled, you can keep it in the fridge too. That’s up to you!

How Long Does Homemade Fudge Last?

You can keep fudge for about 2 to 3 weeks in the fridge. If you’re keeping it on the counter, assuming it’s contained properly, you can keep enjoying it for a week to 2 weeks.

Can You Freeze Fudge?

Yes, frozen fudge is amazing because you can enjoy it now with a frozen texture as needed or save it to enjoy at a later date. It helps to wrap it up in pieces so it’s easier to eat. You can keep it this way in a freezer safe bag or bowl for up to 3 months.

How to Thaw Frozen Fudge

You can just let frozen fudge thaw on your counter. It’s so good cold or room temperature, it won’t matter!

Craving Chinese takeout? You might just be better off making it yourself. A stir fry recipe is one of the easiest things you can ever make and is one of my families favorites. And it’s likely you’ve got what you need in your kitchen to make it ready to go. Even the kids don’t fuss over this dish, eating up every last bit. Best Stir Fry Recipe

Stir fry is colorful and visually appealing while brimming with a bounty of fresh ingredients. Believe it or not, it’s ready from start to finish faster than any takeout place can deliver to your door!

Ingredients to make stir fry

Ingredients in Stir Fry

  • Chicken – the perfect stir fry protein (though you can omit it or sub in something else like shrimp, beef, or even tofu!).
  • Fresh veggies – this chicken stir fry recipe makes use of plenty of fresh veggies including broccoli, red and yellow bell peppers, carrots, and sugar snap peas (or snow peas). I also love adding mushrooms and green onions to stir fry.
  • Sauce – that signature stir fry sauce is a combination of chicken broth, soy sauce (regular or low-sodium), oyster sauce, sesame oil, and cornstarch. You can be creative here to add sauces that are more sweet or spicy. Honey is a great addition for sweetness!
  • Red pepper flakes – gives it a slight kick (and more or less to adjust to your level of spice).

Best Falafel Recipe

I used to stop in this one Middle Eastern place in the mall to get my falafel fix. But once I figured out how to make them myself, it was a game-changer. These are so delicious and wonderful on their own and in pitas too. You’ll see!

Easy Falafel Recipe

I know what you’re thinking because I thought it too. Falafel only looks hard because it’s not in your typical cuisine. It’s funny how we seem apprehensive about trying to cook something from another culture. Rest assured, falafel only has 4 easy steps and you will love it all the more because you made it yourself.

Ingredients for making falafel

Ingredients in Falafel

  • Chickpeas – canned chickpeas save you time over dried chickpeas as you do not need to soak them (and yes, they work!). If you need to substitute out chickpeas, you can use fava beans in their place.
  • Fresh cilantro and parsley – nothing beats fresh herbs to brighten up any recipe.
  • Red onion – gives it some color and that signature onion flavor.
  • Garlic cloves – makes every recipe better.
  • Whole wheat flour – this one works best for me, but you can use any type you wish (even gluten-free!).
  • Baking powder – it gives falafel a lighter texture that you’ll love.
  • Seasonings – with ground cumin plus a dash of salt and pepper, you’ll have the perfect well-rounded flavor.
  • Lemon juice – use fresh-squeezed to give it that Middle Eastern flair.

For Super Bowl or any other gathering, I’m always asked if I’m serving this pico de gallo recipe. I have to double it or else it’s gone within the first 15 to 30 minutes of serving. Everyone loves it, and when you make fresh salsa like this you will never get that jarred junk again.

Best pico de gallo recipe

Best Pico de Gallo Recipe

Pico de gallo is a type of salsa fresca but it’s chunkier. The key to the best pico de gallo is using super-fresh ingredients. You can’t go wrong with that, and while it tastes so good, it has plenty of good-for-you nutrients too!

Easy Pico de Gallo Recipe

This pico de gallo recipe is so easy, you can make it just minutes before guests arrive and they’d never know. In only 10 minutes from start to finish, you’ll have fresh pico de gallo that no one can resist. Plus its very versatile making it the perfect condiment.

Ingredients for making pico de gallo from scratch

Ingredients in Pico de Gallo

  • Fresh tomatoes – use the reddest and ripest ones you can find!
  • Onion – white onions give the best, most authentic flavor over red onion.
  • Jalapeño – gives it a little kick. If you don’t have jalapeno pepper you can substitute a serrano pepper.
  • Cilantro – fresh is best though dried will do in a pinch.
  • Lime juice – squeeze it fresh for the best taste.
  • Salt – just a little bit unites all the fresh flavors.

What’s different between salsa and pico de gallo?

Basically, it comes down to the texture. Traditional pico de gallo is chunkier than tomato salsa though they do share the same ingredients.

Expert Tips and Tricks for the Perfect Pico de Gallo Every Time

  • Fresher is better. The fresher your ingredients, the better the taste will be.
  • Use white onions. They have a sharp flavor but it works so well with the citrusy lime and tomatoes for perfect contrast.
  • Red tomatoes are a must. Don’t settle for pink tomatoes in this recipe! They should be as red as possible.
  • Skip the garlic – Fresh garlic is great in guacamole. But for pico de gallo, skip it.
  • Mango is a great addition – if you’ve never had mango salsa, you have to try it. Simply add in fresh diced mango to the recipe. It adds a delicious sweetness!

How do you make pico de gallo from scratch

What Tomatoes are Best for Pico de Gallo?

The type matters a bit less than what they look like. I recommend choosing what’s seasonally fresh by you. Vine-ripened and heirloom are great summer options but even Roma tomatoes are a go. They just need to be as red as can be for any tomato you use.

What onion is best for Pico de Gallo?

White onions make for the best pico de gallo. They have a sharp taste but that is tamed by the other ingredients for a perfect pairing.

What can I add to Pico de Gallo to make it better?

It’s all in the lime juice and cilantro. Make sure they’re fresh, and that your tomatoes are fresh too. Even if you hate spicy things, don’t skip the jalapeno. Adding just a little bit in will round out the flavor.

How do you make homemade Pico de Gallo spicier?

Add more jalapeno! This will definitely kick it up in heat. However, do taste it first as-is before adding more jalapeno in there.

What to Serve with Pico de Gallo

The options are endless! Put it on the table next to guacamole, cheese dip, or avocado salsa with tortilla chips as a snack. Serve it with any Mexican food main dish like tacos, burritos, fajitas, enchiladas, burrito bowls, and quesadillas. Stir it in scrambled eggs or an omelet. Top off burgers with it too!

What is the difference between salsa and pico de gallo

How to Store Pico de Gallo

Pico de gallo needs to be kept in the fridge in an airtight container. Don’t let it sit out too long!

How Long Does Pico de Gallo Last?

It’s best to eat your pico de gallo in the same day. It’s rare I’ve had any leftover after making it because it’s so good. You can make it ahead of a party too, but it needs to be used before 3 days are up.

Can You Freeze Pico de Gallo?

Technically, you can freeze pico de gallo. You’ll have a different texture though from the tomatoes and cilantro. Be sure to drain any excess juice before freezing. It should keep up to 3 months.

How to Thaw Frozen Pico de Gallo?

Simply put it in the fridge to thaw. It should be ready to dig into the next day.

  • Chicken breast – use fresh, boneless, and skinless, though if you have other fresh chicken you want to use like boneless, skinless chicken thighs, go for it!
  • Chicken broth – this creates the base of the soup with more flavor than just water
  • Celery, carrots, onions, and garlic cloves – these veggies flavor the broth and add more nutrients
  • Fresh herbs and aromatics – fresh rosemary and thyme plus ginger garlic paste are the secret to a sublime flavor. Sometimes I also like to add a bay leaf or two and sprinkle fresh parsley on top. You’ll notice I do not include oregano on this recipe. I find the blend between rosemary and thyme with the ginger garlic paste to be perfect!

  • Frozen peas – gives it more veggie protein
  • Basmati rice – for a soup that really eats like a meal. Can substitute short pasta noodles, egg noodles, zucchini noodles, or even potatoes.

How do you make chicken soup from scratch

How do you Make Chicken Soup from Scratch?

My mom has always said that everyone should know how to make chicken soup from scratch. Once you do, you’ll never open another can of it (unless there’s a storm that wipes out your power and you have no choice). In one pot, you heat oil and then add the onions, celery, carrots, and garlic. Then you’ll add ginger paste and turmeric. After that, everything but the rice and peas goes in. Let it boil, then add the rice. In the last few minutes, the frozen peas go in and voila! Chicken soup from scratch!

Tips and tricks for making chicken soup

Expert Tips and Tricks for the Perfect Chicken Soup Every Time

  • Don’t use water. Chicken broth adds much more flavor!
  • Low Sodium – Cut down on sodium by using a reduced sodium broth or one with no added salt. You can add salt to taste without going overboard.
