How do you Make Gnocchi from Scratch?

It all starts with baking your potatoes. This takes about an hour to cook, then you need to let them cool fully. You’ll scoop out the potatoes, mash them, and then stir them with flour, ricotta, parmesan, and a little salt and pepper. Then you flour a surface and divide up your dough. Roll them up into ropes and cut them into bite-sized pieces. Then roll them along with a fork to get a ribbed texture like a traditional Italian gnocchi recipe. When you’re ready to cook them, throw them in boiling water. It helps to make batches as you don’t want to overcrowd them. Cook for 5 to 6 minutes per batch, drain, and then add your favorite sauce.

  • 1 1/2 lbs thinly-sliced flank or skirt steak
  • 1 small white onion (thinly sliced)
  • 1 lb baby bella sliced mushroom
  • 8 garlic cloves (minced)
  • 1/2 cup dry white wine
  • 1 1/2 cups beef stock ((beef broth))
  • 1 tbsp Worcestershire sauce
  • 3 tbsp all-purpose flour
  • 1/2 cup sour cream
  • fresh parsley (chopped for garnish)

  • Fill a large pot about 3/4 of the way with water an heat over high heat and bring to a boil. Generously salt the water and cook the egg noodles until tender. While the pasta is cooking, melt 2 tbsp of butter in a large skillet over medium high heat. Add the steak to the sauce pan, season with salt and pepper, and cook for about 3 minutes to sear on one side. Once browned on one side, flip the steak and cook on the other side until evenly browned. Remove the steak from the pan, place it on a plate and set aside. To make sure the meat is evenly cooked, you may want to cook the meat in batches to avoid overfilling the pan.
  • Using the same saute pan, add the remaining 2 tablespoons butter to the saute pan and melt over medium high heat. Once melted, add the onions and saute for about 3 minutes until they become semi translucent, add the mushrooms and saute for an additional 6 minutes and then add in the garlic. Carefully pour in the white wine and stir regularly allowing the mixture to reduce for another 3 minutes.
  • While the wine mixture is reducing, in a mixing bowl, add in the beef stock, Worcestershire sauce and flour and whisk until well combined. Carefully pour the mixture into the saute pan, stir well to combine and bring to a simmer for about 4 minutes. Next, add the sour cream and cooked steak and stir until well combined and the meat is evenly coated. Serve warm over the cooked egg noodles and garnish with fresh chopped parsley. Enjoy!

Are you still buying that pesto from the supermarket shelves? It’s time to stop and make your own pesto recipe with fresh ingredients. It tastes so much better, you’ll wonder why you ever settled! My family loves it on pasta, sandwiches, and pizza. Best of all, it takes minutes to prepare and yields the kind of flavor that whisks you to Italy!

Best Pesto Recipe

What makes a pesto recipe the best pesto recipe? It’s the fresh ingredients. If you’ve ordered pesto at a proper Italian restaurant, surely you’ve noticed the difference between what they serve and that jarred stuff. Now you can make it yourself and have that heavenly flavor every time!

What is pesto?

Pesto comes to use from Genoa in Italy. The original dish is called Pesto alla Genovese. The authentic way to make it is with basil leaves, pine nuts, crushed garlic, coarse salt, olive oil, and Parmigiano-Reggiano.

Ingredients for making homemade pesto sauce

Pesto Ingredients

  • Fresh basil – it’s the signature pesto ingredient that provides that bright green color.
  • Garlic – adds that pungent taste.
  • Pine nuts – gives pesto that unmistakable texture.
  • Parmesan cheese – because pesto needs cheese.
  • Extra virgin olive oil – it brings the consistency together.

How Do You Make Pesto from Scratch?

This pesto sauce recipe requires just 6 ingredients and your food processor. You’ll pulse fresh basil, pine nuts, garlic, parmesan cheese, and salt together while adding in olive oil until it gets the right consistency. Then it’s ready!

What is pesto made of?

Basil is the key ingredient in pesto sauce. It is what gives pesto it’s signature color and flavor as well. Basil pesto recipes have a slightly sweet yet savory and pungent taste and chunky texture.

How to make pesto from scratch

Expert Tips and Tricks for the Perfect Pesto Sauce Every Time

  • Use cold water – Wash your basil in cold water. It’s a very delicate herb that will wilt if you use warm water.
  • Nut substitutes – Walnuts and pecans can be substituted for pine nuts if you can’t find them, though I think pine nuts are the best.
  • Don’t skimp on oil quality – Don’t forget to make sure you use a quality olive oil for your pesto. You want something that has the kind of taste you enjoy drizzled over things, not something you cook with.
  • Food processor – Also, use a food processor and not a blender. Blenders can over-combined and change the texture. Some people love to use a mortar and pestle but a food processor will be much faster and turn out great!

What goes well with pesto

Why is my basil pesto sauce bitter?

If your basil pesto sauce tastes bitter, you can add in more cheese, pine nuts, or garlic to balance it out. It’s best to taste-test a little of your basil first to make sure it’s not bitter to avoid the problem altogether.

What can I add to pesto to make it better?

Pesto only contains 6 ingredients. If you find yours is lacking in flavor, add more garlic, more cheese, or more salt to taste. Additionally, be sure the basil you choose is fresh so you get a truly authentic flavor.

What can I use instead of parmesan cheese in pesto?

If you don’t have parmesan cheese for your pesto, you can use asiago or pecorino Romano. For a dairy-free replacement, simply omit the cheese and use extra pine nuts. You can also replace pine nuts with cashews, almonds, walnuts, or Brazil nuts.

How to store pesto sauce

Can I just put pesto on pasta?

Pesto is good for so many things beyond pasta. Try it on a burger or sandwich. Dip fries into it. Replace red sauce on pizza. Dunk breadsticks into it. Pesto is meant to be enjoyed creatively!

Is pesto made from basil

What goes well with pesto?

Pesto pairs perfectly with bowl of pasta or pizza. But that’s not the only thing you can do with your new batch of homemade pesto. You can spread it on sandwiches (blend with mayo to make a creamy spread) or toss it into a chicken salad with tomatoes, almonds and a squeeze of fresh lemon juice. Caprese salad is also great way to use pesto.

Best wasy to use pesto on pasta

How to Store Pesto Sauce

You can keep your homemade pesto in an airtight container in your fridge for as long as a week. Make sure to cover with a lid or plastic wrap so it is airtight. It probably won’t be around that long though since it’s so delicious!

How long does homemade pesto last?

Pesto will keep for a week in a jar in your fridge. If you have any leftover after that, you should freeze it so you can enjoy it at a later date.

Can you freeze pesto?

Pesto freezes really well. I like to portion it out into ice cube trays. When they freeze, I dump them into plastic freezer bags. They’ll be good for 6 months. You can also freeze it in airtight containers which will keep for 12 months.

How to Thaw Frozen Pesto

If you let your pesto sit at room temperature for 30 minutes, that should do it. You can microwave it in 10-second increments if it still feels frozen.

There is NOTHING like fresh pesto! The taste, texture, and color is amazing and it goes perfect in a variety of dishes, the most popular being pasta and pizza. A great pesto recipe should come out a rich green color. However, basil pesto tends to darken when it is exposed to air. To keep it green and fresh, store it covered tightly in an air tight container.

  • 6 cups fresh basil leaves
  • 1/2 cup pine nuts
  • 3/4 cup parmesan cheese
  • 4 garlic cloves
  • 1 teaspoon kosher salt
  • 3/4 cup extra virgin olive oil

  • In the bowl of a food processor, combine the pine nuts, parmesan cheese, basil leaves, garlic cloves, and salt and pulse until finely ground. While the food processor continues to run, pour in the olive oil at a slow and steady stream until pesto is mostly smooth. Top with fresh parmesan cheese.
  • Top on fresh pasta, pizza or any other of your favorite ways to use pesto sauce!

Mac and Cheese Ingredients

  • Elbow macaroni – Well, the name of the dish says it all! Elbow macaroni is one of the quintessential ingredients for baked mac and cheese!
  • Butter – You’ll need unsalted butter to serve as the fat base for your cheese sauce.
  • Flour – And to go with that butter and add thickness, you need flour.
  • Milk – How else can you get that sauce to be creamy?
  • Cheese – Your favorite melting shredded cheeses are the key to delightfully cheesy mac and cheese! So what is the best cheese to use for macaroni and cheese? My family prefers a blend of sharp cheddar and mozzarella, but you can also use different cheeses such as Swiss cheese, Parmesan cheese, white cheddar, Gruyere, or Gouda if you love those.
  • Breadcrumbs – This gives easy baked mac and cheese a wonderful crust on top that contrasts with the rich creaminess of the dish. It is a combination that you just cannot achieve with stovetop mac and cheese. If you’re out of breadcrumbs you can substitute panko instead!

Making homemade macaroni and cheese from scratch is just as easy as that boxed junk only it comes without chemicals and additives. You’ll need elbow macaroni cooked to al dente texture. Then you’ll make the cheese sauce with butter, flour, and milk. Add the cheese, then mix the pasta, cheese sauce, and top with breadcrumbs and bake it up until it’s bubbly and irresistible! How to cook mac and cheese

Expert Tips and Tricks for the Perfect Creamy Mac and Cheese

  • Choose the right cheese(s) – To have the best creamy mac and cheese, you need to use melting cheeses. Cheddar is one of them, but if you mix it with mozzarella too, you get unbelievable creamy and cheesiness. My son used to love boxed Velveeta until we started making this and now there is no turning back!
  • Warm the milk – Warm up the milk too before adding it to your cheese sauce mixture. This makes it thicken up faster and more evenly.
  • Mustard powder – This recipe calls for optional dry mustard powder. If you don’t have it on-hand, you can leave it out. But if you do, try it. It will NOT give you a strong mustard flavor or anything. It has a nice acidity that brings balance to the creaminess and depth to the flavor for an even more comforting dish. You can also substitute a half teaspoon of garlic powder for you garlic lovers out there.

Pro Tip: A creamy baked macaroni and cheese recipe with bread crumbs is not just for the kids. When I’m alone I love making an ‘adult’ version by adding roasted veggies!

What can I add to my mac and cheese to make it better?

Mac and cheese is plenty good on its own but if you want to add to it, crumbled cooked bacon is a dream come true. Grated parmesan or Romano cheese can add an Italian flourish while hot sauce gives it a kick. If you have leftover hot dogs or ham, chop them up to add too.

Can I Freeze Macaroni and Cheese

Yes, but it is not recommended. When you freeze and reheat mac and cheese the creamy consistency does not hold up well at all. It often results in a mushy mess. It is best to use a refrigerator in this case over the freezer. Fortunately, its a very fast dish to make so fresh is the best approach.

This is my families FAVORITE baked Mac and Cheese recipe! Honestly its the best mac and cheese we've every had. Its super creamy with both cheddar and mozzarella cheeses and comes out perfect every time! This family favorite is perfect for groups and always have people coming back for seconds.

  • 1 lb elbow macaroni
  • 6 tbsp unsalted butter
  • 5 tbsp all purpose flour
  • 2 1/2 cups milk
  • 2 cups grated cheese ((sharp cheddar cheese & mozzarella cheese make a great blend))
  • 1/2 tsp salt
  • 1/4 tsp mustard powder (optional)
  • 1/2 cup bread crumbs

  • Preheat your oven to 400F degrees. Grease a 9x13-inch baking casserole dish with butter.
  • In a large pot, bring salted water to boil and cook the elbow pasta until al dente. Drain and set aside.
  • In a large saucepan, melt butter over medium heat to start the mac and cheese roux. Add in the flour and whisk until a thick, smooth paste is formed. Cook for about 2 minutes.
  • In a separate bowl, warm the milk in the microwave and then slowly whisk into the roux. Cook the sauce over medium heat until thickened, about 5 to 8 minutes. Stir slowly while the sauce thickens and be sure to scrape the bottom of the pan. Remove the pan from the heat and stir in the shredded cheese one handful at a time. Stir in the salt and optional mustard powder after the cheese has fully melted.
  • Transfer the cooked pasta to a large mixing bowl and pour the sauce over the pasta, stirring gently until the pasta is evenly coated. Transfer the pasta to the greased baking casserole dish and sprinkle the top with bread crumbs. Bake the pasta until bubbly and golden brown about 15-20 minutes. Serve immediately.

Best Lasagna Recipe

This is the best lasagna recipe you’ll find out there because it uses fresh herbs in it which elevates the flavors. Serve it for a family gathering or just immediate family and you’re going to get lots of those “Mmmmm” sounds!

Lasagna ingredients

Lasagna Ingredients

  • Ricotta cheese – how else can you get that dreamy, creamy, cheesy filling? If you don’t have ricotta, no  worries, cottage cheese is a great substitute.
  • Marinara sauce – it’s the best red tomato sauce for the job!
  • Lasagna noodles – you can even get the no boil noodles to save some time!
  • Cheeses – you’ll need both grated parmesan and fresh mozzarella to create your cheese blend.
  • Fresh herbs – chopped parsley and basil are the best in lasagna.
  • Meat – This simple lasagna recipe calls for ground beef. If you are running low you can substitute a blend of ground beef and Italian sausage which is a delicious way to create your Bolognese Sauce. If you are vegetarian and prefer it to be meatless, you can simply omit it. Cheese lasagna is also amazing, and so is adding spinach for an extra boost of veggies.

Easy Lasagna Recipe

I know amazing lasagna might look difficult, but I promise it’s so easy. It’s all about layering and you’ll see exactly how to do that below. Once you do it once, you’ll always know how to make this easy traditional lasagna recipe!

How to make lasagna from scratch

Lasagna is not just spaghetti flavored cake.

How many layers should lasagna have

How Do You Make Lasagna from Scratch?

Making lasagna from scratch doesn’t mean you need an Italian Nona to come help you. All you need are a few key ingredients (see below) to put together. They’re easy to find so it won’t take you long at the supermarket.

The big emphasis I want to make here is what takes it to the next level. Using fresh chopped parsley and basil makes it taste like something you’d get from your favorite Italian restaurant.

How long do I bake lasagna

Expert Tips and Tricks for the Perfect Lasagna

  • Get the right ingredients – don’t skimp on quality ingredients for a stellar final dish. Get no-boil noodles to save some time.
  • Be careful not to over-bake – It is better to error on the side of caution and under-bake your lasagna rather than overdo it. Once its overdone there is no going back.
  • Make extra sauce for serving – lets be honest, who would turn down extra sauce on top of their lasagna.
  • Brighten your lasagna with fresh basil – if you love basil, some fresh whole basil leaves on the top of your lasagna can really take it to the next level

How to make lasagna step by step?

Lasagna step by step is very simple. You will cook your ground beef until no longer pink, mix it with the sauce, and then layer it in your pan with the noodles, cheeses, and herbs and spices. You can also omit the meat if you would like a meatless dish.

What to serve with lasagna

Do you have to boil lasagna before baking?

You will save time using noodles that are no-boil. They also make gluten-free no-boil noodles for lasagna. However, if you have the regular boil-first type of noodles, you will need to cook them and drain them first before baking.

How Many Layers Should Lasagna Have?

One box of lasagna noodles should have you at about 4 layers. However, your lasagna layers can vary if you’re using a differently sized pan. You’ll want to fit 3 lasagna noodles across the bottom and then stack it accordingly in layers until you’ve used up all the ingredients.

What do you put on the bottom layer of lasagna?

You will put the sauce and meat as the very bottom layer. If you start with your noodles, they will stick to the bottom. The sauce and meat keeps it moist. To recap, you’ll put sauce down first, then noodles, then ricotta, and repeat until you’re finished.

Lasagna baking dish

Is lasagna better with ricotta or cottage cheese?

Lasagna is definitely better with ricotta cheese. The whole milk version adds the perfect creamy, cheesy richness. If you’d like to reduce calories, you can certainly use cottage cheese instead.

Why do you add egg to ricotta cheese for lasagna?

Some recipes add egg to the ricotta cheese in lasagna. This recipe does not, as part of the fun of lasagna is when the cheesy layers ooze out in every bite.

Noodles for lasagna

Pro tip: Runny Lasagna

Why is my lasagna so runny?

To prevent the common problem of runny lasagna. You must let your lasagna rest for a minimum of 15 minutes once you take it out of the oven. This allows it to set in shape. You won’t have to do this when you reheat it but the first time you pull it out of the oven, it must sit so it can solidify.

If your marinara meat sauce is too runny, you can add one small can of tomato paste to thicken it without altering the traditional lasagna flavor.

Can you freeze lasagna

How Long Should I Bake Lasagna?

In this classic meat lasagna recipe with ricotta cheese, you should bake it covered with aluminum foil for 30 minutes. There will be 2 minutes of broiling after that to get the cheese on top nicely browned and bubbly. Once you see the top starting to barely brown your baked lasagna is ready to remove from the oven.

How long does lasagne take to cook at 200 degrees?

For this lasagne recipe, the temperature is set for 350 degrees. But at 200 degrees, the lasagna cook time will be about 45 minutes until it is bubbling and ready.

Do you cook lasagna covered or uncovered?

You will definitely want to cover your lasagna before cooking it. This keeps it from drying out, especially on top. At the end of the cook time, you’ll broil it for a minute or two to get the cheese on top bubbly.

How to reheat lasagna

What to Serve with Lasagna (Side Dishes)

Nothing goes better with lasagna than fresh garlic bread! You can also serve up a garden salad brimming with vegetables or a sautéed side dish of broccoli rabe, garlic spinach, or asparagus.

Traditional Italian lasagna

Can You Freeze Lasagna?

I love making lasagna ahead of time and stuffing it in my freezer. It’s a smart way to have a ready-to-make dinner ready to go on a busy night. Just double or even triple the recipe below and then freeze that extra. You’ll want to defrost it in the fridge overnight the day before and then simply follow the baking instructions you see below.

Lasagna baking in the oven

How to Reheat Lasagna

The absolute best way to reheat your lasagna from the fridge is by putting it in a bake-safe dish, adding about 2 tablespoons of water, and covering it with aluminum foil. This keeps it from drying out. Put it at 350F for 15 to 25 minutes until heated through.

You can also put it in your toaster oven if you’re just heating a piece for yourself. The microwave is my least favorite way but it works. Just a few minutes and it’s ready though do yourself a favor and cover it with a paper towel to keep it from making a mess.
