Craving Mexican quesadillas? In less than 20 minutes, you can whip up a batch of these for a fun family snack for movie night or a festive dinner without a fuss. My kids gobble these right up, even when I sneak other veggies in them. So simple and delicious, you’ll wonder why you didn’t try to make your own quesadilla recipe before!

Best quesadilla recipe

Best Quesadilla Recipe

The best quesadillas come from fresh ingredients that you pick. What’s in the quesadillas at those fast food places? Do we even WANT to know? I don’t think so. Quesadillas are one of the easiest and tastiest things you can ever cook that will make everyone happy.

quesadilla ingredients

Homemade Quesadilla Ingredients

  • Flour tortillas – Choose the large kind. If you’re gluten-free, they make options for you too so you won’t have FOMO!
  • Shredded cheddar cheese – You can’t have a quesadilla without the cheese!
  • Toppings – I’ve listed diced white onion, chopped cilantro, and sliced jalapenos to throw into your quesadillas but you can add whatever things you like including spinach, mushrooms, and bell peppers. You can also add meats like chicken or steak but they need to be fully-cooked first.
  • Accompaniments – These are the things you’ll serve with your quesadillas that everyone can top their way like sour cream, avocado slices (or even guac!), pico de gallo, and lime slices.

Easy quesadilla recipe

You’ll grab a large skillet and heat over medium high heat with 2 tablespoons of olive oil. Toast a tortilla on both side, then add half a cup of the shredded cheddar, spreading it evenly. Toss on your toppings and then put the lid on your skillet to steam the cheese into melting. With your spatula, fold the quesadilla in half. Repeat to make more quesadillas and serve them with the accompaniments you’ve chosen like sour cream, pico de gallo, and avocado!

How do you make chicken quesadillas from scratch

Expert Tips and Tricks for the Perfect Mexican Quesadilla Every Time

  • Don’t fold the quesadilla first. Everything gets meltier and more delicious if you cook it flat first and then fold it in half.
  • Use up leftovers. Got leftover rotisserie chicken or some steak from last night? These things are amazing in quesadillas!
  • Measure your oil. Too much of it and you’ll get greasy, soggy quesadillas.
  • Use flour tortillas. Corn tortillas will fall apart during this process. And again, if you’re gluten-free, they make tortillas that use safe flours for you to consume that will work for quesadillas.

How do I make good quesadillas?

Shredded cheddar is the best cheese when making quesadillas. It gets so nice and melty and has that cheerful color. But if you’d like to use a different cheese or cheese blend, go ahead. It’s easiest if you use shredded varieties though.

What kind of white cheese is used in quesadillas?

While shredded cheddar is common in quesadillas in the US, Oaxaca cheese is often used in quesadillas made the authentic way. Other options include Manchego, asadero, and Chihuahua cheeses. As these are harder to find, I’ve listed cheddar on this recipe but mix it up as you see fit!

How do you spice up a cheese quesadilla?

How to Store Quesadillas

The place for any leftover quesadillas is your fridge. You’ll want to wrap them in foil or stack them in an airtight container.

How Long Do Quesadillas Last?

In your fridge, quesadillas will last about 3 days. That should be plenty of time to eat them all up.

Can You Freeze Quesadillas?

Quesadillas freeze beautifully! If you freeze them on a flat surface like a baking sheet and then move them to an airtight container, you’ll save room and make it easier to reheat. You should use them up within 2 months.

How to Reheat Quesadillas?

You can either bake them at 350 for about 7 minutes or simply pull out your skillet and warm them up that way. I prefer the skillet since I can see when the cheese gets nice and melty again.

Shrimp Taco Ingredients

  • Shrimp – Use the large ones and make sure they’re peeled and deveined.
  • Tortillas – Use flour or corn, preferably corn as that’s more authentic.
  • Shrimp Taco seasoning – To give that shrimp proper flavor. If you like spicy shrimp tacos, I recommend adding in some chipotle powder seasoning for a kick.
  • Zesty lime coleslaw sauce – Shrimp tacos with slaw are the perfect pairing. You’ll make this with a bag of coleslaw mix, plain Greek yogurt, lime juice, jalapenos, green onions, minced garlic, cumin, and salt and pepper. This combo makes the perfect shrimp taco sauce!

My family loves this easy chicken enchilada recipe! This recipe is so simple the kids can help and you can easy customize it to add in all of your favorite toppings!

Ingredients

  • 2 tbsp avocado oil
  • 1 large white onion (diced)
  • 1 rotisserie chicken (shredded)
  • 4.5 oz can diced green chilies
  • sea salt (to taste)
  • black pepper (to taste)
  • 16 oz can black beans
  • 8 large flour tortillas
  • 3 1/2 cups Mexican-blend shredded cheese
  • 1 large can of red enchilada sauce
  • cilantro (chopped for garnish)
  • red onion (chopped for garnish)
  • sour cream (for garnish)
  • jalapeno pepper (chopped for garnish)

Instructions

  • Preheat oven to 350F and grease a baking dish. Then, heat the avocado oil in a large pan over medium-high heat. Add in the onion and saute for about 4 minutes, occasionally stirring.
  • Once the onions have slightly softened, add in the shredded chicken and green chilies, and liberally season with salt and pepper. Saute the entire mixture for about 4 minutes, then add in the beans and stir until fully combined. Remove from heat and set aside.
  • Now it is time to assemble the enchiladas. Create an assembly line of tortillas, enchilada sauce, chicken and bean mixture, and cheese. Create the enchilada by laying out a tortilla, spreading out 2 1/2 tablespoons of enchilada sauce, then adding a liberal spoonful of the chicken mixture in the center, then sprinkle about 1/3 cup of cheese. Roll the tortilla up and place in the greased baking dish. Repeat this process with 7 remaining tortillas.
  • Spread the remaining enchilada sauce over the top and sprinkle with leftover cheese. Bake the enchiladas for about 20 minutes until the cheese is bubbly and melted. Remove from the oven and garnish with sour cream, red onion, and cilantro.

Pico de Gallo Ingredients

  • Fresh tomatoes – use the reddest and ripest ones you can find!
  • Onion – white onions give the best, most authentic flavor over red onion.

  • Lime juice – squeeze it fresh for the best taste.

Expert Tips and Tricks for the Perfect Pico de Gallo Every Time

  • Fresher is better. The fresher your ingredients, the better the taste will be.
  • Use white onions. They have a sharp flavor but it works so well with the citrusy lime and tomatoes for perfect contrast.
  • Red tomatoes are a must. Don’t settle for pink tomatoes in this recipe! They should be as red as possible.
  • Skip the garlic – Fresh garlic is great in guacamole. But for pico de gallo, skip it.
  • Mango is a great addition – if you’ve never had mango salsa, you have to try it. Simply add in fresh diced mango to the recipe. It adds a delicious sweetness!

How do you make pico de gallo from scratch

What Tomatoes are Best for Pico de Gallo?

The type matters a bit less than what they look like. I recommend choosing what’s seasonally fresh by you. Vine-ripened and heirloom are great summer options but even Roma tomatoes are a go. They just need to be as red as can be for any tomato you use.

What onion is best for Pico de Gallo?

White onions make for the best pico de gallo. They have a sharp taste but that is tamed by the other ingredients for a perfect pairing.

What can I add to Pico de Gallo to make it better?

It’s all in the lime juice and cilantro. Make sure they’re fresh, and that your tomatoes are fresh too. Even if you hate spicy things, don’t skip the jalapeno. Adding just a little bit in will round out the flavor.

How do you make homemade Pico de Gallo spicier?

Add more jalapeno! This will definitely kick it up in heat. However, do taste it first as-is before adding more jalapeno in there.

How do you keep Pico de Gallo from getting watery?

The salt draws out the water in the vegetables. If you’d like to avoid watery Pico de Gallo, you can serve it immediately. Or use the salt on the tomatoes first, then drain them so they don’t water down your creation.

What to Serve with Pico de Gallo

The options are endless! Put it on the table next to guacamole, cheese dip, or avocado salsa with tortilla chips as a snack. Serve it with any Mexican food main dish like tacos, burritos, fajitas, enchiladas, burrito bowls, and quesadillas. Stir it in scrambled eggs or an omelet. Top off burgers with it too!

What is the difference between salsa and pico de gallo

How to Store Pico de Gallo

A pico de gallo salsa recipe needs to be kept in the fridge in an airtight container. Don’t let it sit out too long!

How Long Does Homemade Pico de Gallo Last?

It’s best to eat your pico de gallo in the same day. It’s rare I’ve had any leftover after making it because it’s so good. You can make it ahead of a party too, but it needs to be used before 3 days are up.

Can You Freeze Pico de Gallo?

Technically, you can freeze pico de gallo. You’ll have a different texture though from the tomatoes and cilantro. Be sure to drain any excess juice before freezing. It should keep up to 3 months.

How to Thaw Frozen Pico de Gallo?

Simply put it in the fridge to thaw. It should be ready to dig into the next day.

  • Adjustments – Feel free to adjust this taco meat seasoning recipe to suit your own personal taste after making it once. Some of us love more spice while others want a smokier taste. You do you!

Best Ways to Use Taco Seasoning

Leftover taco meat? Add a little more seasoning to it and bake it over tortilla chips with lots of cheese for a nacho-rific snack. Try it in soups, coat chickpeas with it and roast them, or make quinoa a whole lot more appealing. Taco seasoning made from scratch is the best way to elevate the flavors of your foods in a bold new way!

How much taco seasoning do I need for 1 pound of meat?

When you make your own taco seasoning, you’ll need 2 tablespoons of it to properly season one full pound of meat.

What Can You Make with Taco Seasoning

Aside from tacos, I love trotting out my taco seasoning on side dishes to take them to a new level. Taco rice is a surefire way to please alongside grilled meats while taco seasoned veggies or potatoes can make them disappear when you’ve got kids at the table.

What can I use instead of taco seasoning?

Yes. Water is what gives it a saucy quality and keeps the meat from being too dry and crumbly.

How much water to add to taco seasoning?

It will depend on how much meat your cooking up for your tacos, but for a pound of ground beef or turkey, you’ll want roughly ¾-cup of water.

Is fajita seasoning the same as taco seasoning?

No, but they are very similar. You could get away with using taco seasoning on fajitas. The primary difference is that fajita seasoning tends to have both garlic powder and onion powder in it.

How to Store Taco Seasoning so it Lasts

Copycat taco seasoning can be kept in an airtight container for up to a year. I have repurposed old spice jars with my homemade taco seasoning. You can use a mason jar if you plan to use lots and lots of it throughout the year. Just keep it in a cool and dry place!

Best Guacamole Recipe

You’ll love this classic guacamole recipe because it’s going to be your go-to when your guac cravings strike. It’s perfect for game-day, for holiday or family gatherings, snack time, or to accompany your Mexican night at home.

Easy Guacamole Recipe

This super simple guacamole recipe is easy to make and this will show you just how easy it is to make homemade guacamole with just a handful of ingredients. You will never buy that pre-made glop from the store ever again! Now go pick up a few pounds of avocados and lets get started!

What is traditional guacamole?

A Mexican guacamole recipe is simply defined as mashed avocado with fresh ingredients. As such, traditional guacamole can vary by recipe as everyone seems to have their own way of making it.

Guacamole ingredients

Guacamole Ingredients

  • Haas avocados – You can’t have guac without them! Hass avocados at room temperature are the best avocados for good guacamole.
  • Lime – As mentioned, it keeps it from turning brown and also adds great zesty flavor!
  • Red onion – Perfectly pungent without being overpowering.
  • Serrano or jalapeno peppers – Guacamole needs a hint of spice, even if you keep it mild. If you love spicy guacamole, just add a bit more pepper.
  • Fresh cilantro – This delightful herb is the key to making authentic guacamole!

How to pick ripe avocados?

The ripening process for avocados is fairly simple. Look for that bulbous end of your avocado. It should give way to firm pressure. Also, make sure that brown stem piece is still intact. Otherwise it will let air into the avocado and it will get overripe. This might not be a big deal if you’re going to make guacamole as soon as you get home, but if you’re waiting a day or two, it will be.

The Best Way to Cut an Avocado

You’ll want to cut your avocado lengthwise. The pit will be easier to pop out. Then you can scoop out the flesh with a spoon onto your cutting board and chunk it up.

How do You Make Guacamole from Scratch

The key to perfect guacamole from scratch is:

  • Finely dice – the ingredients should be in little pieces so you’re not getting giant chunks.
  • Lime juice – this keeps the avocados from turning brown and adds a authentic flavor boost.
  • Control your spice – peppers can add zing without spice if you watch the seeds.
  • Make it less watery – I don’t mind, but if you want your guacamole with a pastier texture, keep the tomato seeds and pulp out of it.

You guac my world.

Expert Tips and Tricks for Guacamole Success!

  • Use ripe avocados – If they aren’t ready yet, they will have a weird texture and flavor. And too ripe means they will have that weird lipstick-like taste. Yuck!
  • Keep it chunky – Some people make guacamole blended but it’s more authentic with chunks of the fresh ingredients in every bite. Chunky guac is more authentic and adds texture.
  • Use fresh ingredients for flavor – You *could* use dried or powdered seasonings but fresh garlic, peppers, tomatoes, and cilantro make the taste so much better!

How do you make guacamole taste better?

Guacamole tastes best when you use the freshest ingredients you can find. Fresh garlic, cilantro, serrano peppers, and onions are far superior to using dried herbs. You’ll have the best guacamole dip when you stick to fresh!

How to make guacamole from scratch

What to Serve with Guacamole (Side Dishes)

If you’re having guacamole as a snack, you need tortilla chips. But you can also serve it with your favorite Mexican dishes like tacos, enchiladas, and burritos. Guacamole is additionally an amazing sandwich condiment to kick up your typical lunch with a Mexican flavor.

Other Ways to Use Guacamole

If everyone is all taco-ed out, you can use that leftover guacamole on toast for avocado toast. Use it to make deviled eggs, serve with fried fish, dunk fries into it, make nachos the next day…there are seriously so many yummy ways to enjoy this fresh guacamole that you should have no problem using it all.

Should guacamole have tomatoes?

While there are many recipes that don’t include tomatoes, this guac recipe uses them. It’s a small amount and adds more nutrition and flavor to your meal.

What can I substitute for lime juice in guacamole?

No lime? No problem! In this healthy guacamole recipe, you can substitute lemon juice or vinegar for lime juice. Lemon is a bit preferred over vinegar but at least you have options for adding the acidity you need to balance out the flavor.

The best way to cut an avocado for guacamole

Is guacamole just smashed avocado?

No, guacamole involves more than simply smashing an avocado. You need to add pungent elements like garlic and onions, fresh herbs, and a bit of acidity to make it the authentic way.

Is avocado spread and guacamole the same thing?

No, they’re not the same at all. Avocado spread is plain with just a little spice and citrus juice or vinegar to keep it from browning. Guacamole is distinctive with fresh herbs and other vegetables like onions, tomatoes, and peppers.

What’s the difference between avocado dip and guacamole?

The difference is that avocado dip is merely mashed avocados while guacamole’s base is of avocados combined with garlic, onions, tomatoes, peppers, and fresh herbs and spices with citrus juice to prevent it from changing to an unsavory color.

Is guacamole gluten-free?

Yes. When you make it yourself following this recipe, you can be sure you’re having a gluten-free experience.

Is guacamole vegan?

Yes, guacamole is 100% vegan. That’s worth throwing a fiesta for all on its own!

How to Store Guacamole

Even when you add lime, you will get some browning if you store any leftover guacamole in your fridge. It is better to use a piece of plastic wrap actually pressed over the guacamole to remove all air trapped inside.

Or you can use an airtight container and smooth the guac over at the top to get rid of any air pockets in side as well. Then add just half an inch of water to cover the surface of your guacamole. Make sure it’s covered tightly and then pop it in the fridge, but be sure you eat it within 2 days.

How do you keep guacamole from getting brown?

Avocados naturally brown when exposed to air. You can’t stop it but you can slow it down using lime juice. If you can’t find lime juice, lemon juice works well too. Also, cover your guacamole with a think layer of plastic wrap actually touching the guacamole so no air is in between and seal off all the edges. These simple tricks will keep your guacamole green much longer!
