  • 1 tbsp soy sauce

  • 4-5 tbsp cooking oil (divided)
  • 2-3 tbsp garlic ginger paste
  • 1/2 red bell pepper (seeded and diced)

  • 10-12 dried chilis (cut into 1/2 inch pieces)
  • 1 1/2 tbsp Szechuan peppercorns
  • 1 cup celery (diced)
  • 6 green onions (cut into 1 inch pieces)
  • 3/4 cup roasted unsalted peanuts
  • 3 tsp sesame oil

Kung Pow Sauce

  • 3/4 cup chicken stock
  • 6 tbsp soy sauce
  • 2 1/2 tbsp balsamic vinegar
  • 2 1/2 tbsp shaoxing wine
  • 3 tsp dark soy sauce
  • 3 tsp hoisin sauce
  • 1 1/2 tbsp sugar
  • 1 tsp corn starch

Instructions 

  • Whisk together the shaoxing wine, soy sauce, baking soda, and corn starch in a small bowl and add the cubed chicken. Cover and allow to marinate for 10-15 minutes. While the chicken marinates, combine the stir- fry sauce ingredients together and set aside.
  • Once the chicken has fully marinated, heat 2-3 tbsp of cooking oil in a wok on high heat. Add the chicken and cook for about 4-5 minutes, or until the edges are browned. Remove the chicken and set aside. Then, add 2 tbsp of cooking oil into the wok. Fry the garlic ginger paste, bell peppers and peppercorns for 1-2 minutes before adding in the stir fry sauce. Bring the stir fry sauce to a boil, and once it begins to thicken, add the chicken back in. Stir everything until the chicken has been evenly coated. After about 2 minutes, add in the scallions, peanuts, and sesame oil, mixing well. Serve hot with white rice.

  • 1/2 cup all-purpose flour
  • kosher salt (to taste)
  • black pepper (to taste)
  • 1 1/2 tsp garlic powder
  • 2 2 (halved to make 4 fillets)

  • 4 chicken breasts (boneless/skinless, cut into bite-size pieces)
  • 4 eggs (whisked)
  • 1/3 cup cornstarch
  • 1/3 cup flour
  • vegetable oil (for frying)
  • salt (to taste)

Orange Chicken Sauce

  • 1 cup orange juice
  • 1/3 cup sugar
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce

  • Once the onions have slightly softened, add in the shredded chicken and green chilies, and liberally season with salt and pepper. Saute the entire mixture for about 4 minutes, then add in the beans and stir until fully combined. Remove from heat and set aside.
  • Now it is time to assemble the enchiladas. Create an assembly line of tortillas, enchilada sauce, chicken and bean mixture, and cheese. Create the enchilada by laying out a tortilla, spreading out 2 1/2 tablespoons of enchilada sauce, then adding a liberal spoonful of the chicken mixture in the center, then sprinkle about 1/3 cup of cheese. Roll the tortilla up and place in the greased baking dish. Repeat this process with 7 remaining tortillas.
  • Spread the remaining enchilada sauce over the top and sprinkle with leftover cheese. Bake the enchiladas for about 20 minutes until the cheese is bubbly and melted. Remove from the oven and garnish with sour cream, red onion, and cilantro.

After researching several whole chicken recipes online I was hard-pressed to find a simple one. So, as a parent with limited time, I came up with this easy whole roasted chicken recipe because it only takes 15 minutes of prep time and you just pop it in the oven. The best thing about cooking chicken in the oven is that its so little work and cleanup. You just baste it from time-to-time until it’s done. While you make oven roasted chicken, you can work on other sides or simply have some of that wine (hey, you had to open that white wine for the recipe so why not?!?).

This tender garlic, butter & herb roast chicken is a family favorite! The chicken comes out crispy on the outside and tender and juicy on the inside every time. It has the perfect blend of fresh herbs and butter then roasted to golden brown.

Ingredients

  • 4 lb whole chicken
  • 1/4 cup unsalted butter (melted)
  • 3 tbsp olive oil
  • 1/4 cup white wine
  • 1 lemon (halved)
  • salt (to taste)
  • pepper (to taste)
  • 2 tbsp freshly chopped parsley
  • 9 garlic cloves (4 minced, 5 whole)
  • 3 fresh rosemary sprigs
  • 1 fresh thyme sprig

Instructions 

  • Preheat oven to 425F and line a baking tray with foil or grease a roasting pan and set aside.
  • Remove the neck and giblets from inside the cavity of the bird and trim any excess fat. Pat the bird dry with paper towels to get rid of any excess moisture. Pour the olive oil, melted butter, white wine, and the juice from half of lemon all over the chicken, under the skin and inside the cavity. Season the chicken well on the outside and inside the cavity with salt and pepper and then sprinkle on the parsley. Next, rub the minced garlic all over the chicken, mixing all of the ingredients together, making sure to get them under the skin. Take the garlic head, rosemary springs, and squeezed lemon half and place them inside the chicken cavity.
  • Place the chicken breast side up into the prepared roasting pan and roast for about an 1 hour and 20 minutes or until juices run clear when the thigh is pierced. Be sure to baste the chicken halfway through the cooking time. Once the chicken is cooked through, remove from the oven and tent with foil for about 10 minutes before serving. Serve with the remaining lemon half and pan juices.
