  • 5 tbsp unsalted butter (for baking sheet)
  • 2 1/2 tbsp smoked paprika
  • 1 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/3 cup flour
  • 10-15 chicken wings

Instructions 

  • Preheat the oven to 400F. Line a large baking sheet with aluminum foil and coat the foil evenly with the 5 tbsp butter. You can also spray with nonstick cooking spray in addition to the butter if desired.
  • In a large mixing bowl, whisk the flour, smoked paprika, garlic powder, chili powder, salt and pepper. Add the chicken wings into the mixing bowl with the spice mixture and make sure each side is evenly coated. Place the wings in an even layer on the prepared baking sheet and bake for 30 minutes.   • Gently place eggs in a single layer in the bottom of a pot so they do not crack. Make sure the eggs are submerged in water and hard boil them for about 10-12 minutes. Once done, remove from heat and and allow to cool in an ice water bath. Once cooled, peel the eggs and slice them in half lengthwise. Remove the yolk from each egg and place in a small bowl. Mash the egg yolks with a fork and then add the mayo, mustard, salt and pepper. Stir until smooth. Use a spoon (or piping bag) to add a portion of the mixture back into the cavity of each egg white. Garnish with extra paprika.

  • 1 16oz can of chickpeas ((garbanzo beans))
  • 1/2 cup fresh cilantro ((coriander))
  • 1 cup fresh parsley
  • 1 red onion (quartered)
  • 1/3 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 tbsp lemon juice
  • 1 tsp sea salt
  • 1 tsp black pepper

  • 2 1/2 tbsp garlic (minced)

For serving as a Pita

  • pita bread

Instructions

If you want to heat meatballs that aren’t in sauce, heat them at 300F in a single layer on your baking sheet. Cover them so they won’t dry out and heat until they’ve warmed through, about 10 to 15 minutes. In sauce, you can simply warm them over the stove in a matter of minutes. In a pinch, you can use the microwave but without sauce, you risk drying them out.

Meatballs are very versatile and one of my families favorite lunch dishes to make after reheating leftover meatballs is a meatball sub. Simply place a few meatballs on a sandwich roll with some marinara sauce and a sprinkle of fresh parmesan cheese.

This super easy meatball recipe is perfect for an appetizer or a main dish. The meatballs consistently come out tender and juicy!

Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup bread crumbs
  • 1 cup parmesan cheese (grated)
  • 1 cup fresh parsley (chopped)
  • kosher salt (to taste)
  • pepper (to taste)
  • 2 large eggs (beaten)
  • 1/4 cup milk
  • 1 cup ricotta cheese
  • 3 garlic cloves (minced)
  • fresh basil (chopped)

Instructions 

  • In a large mixing bowl, mix together 1 lb ground beef and 1 lb ground pork. Add in the bread crumbs, ricotta cheese, parsley, two beaten eggs, parmesan, milk, and 3 cloves of minced garlic. Add in salt and pepper to taste. Mix well. (a food processor can also be used for this step)
  • Once thoroughly mixed, prepare a baking sheet with a drainage rack. Roll meatballs into golfball sized balls. Bake for 25 minutes at 350F.
  • Garnish with fresh chopped basil and enjoy!

Or you can use an airtight container and smooth the guac over at the top to get rid of any air pockets in side as well. Then add just half an inch of water to cover the surface of your guacamole. Make sure it’s covered tightly and then pop it in the fridge, but be sure you eat it within 2 days.

How do you keep guacamole from getting brown?

Avocados naturally brown when exposed to air. You can’t stop it but you can slow it down using lime juice. If you can’t find lime juice, lemon juice works well too. Honestly the BEST guacamole recipe I've ever tried!  So fast and easy to make, gluten and dairy free, and always a party favorite!

Ingredients

  • 2 large Hass avocados
  • 2 garlic cloves (crushed)
  • 1 tbsp olive oil
  • 1 serrano pepper (or jalapeno) (finely chopped)
  • 1/2 small tomato (chopped)
  • 2 tbsp red onion (chopped)
  • 3 tbsp cilantro (chopped)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 lime (juice fresh squeezed)

Instructions 

  • Halve the avocados. Slice the halves into cross-sections.
  • Scoop avocado into a medium mixing bowl. Gently mix in red onion, tomato, Serrano peppers, cilantro, garlic powder, and lime juice. Add salt and pepper to taste. Mix well but leave chunks of avocado still visible for green goodness!
  • Serve with crispy tortilla chips.

Notes

Carefully wash your hands after handling peppers. They can leave oils in your skin that you do not want around your face. Do not touch your eyes!
