This classic Beef Wellington recipe is comes out tender and juicy everytime! This English holiday favorite wrapped in a flaky buttery pastry is always a crowd pleaser on our table and always has a lot of people asking for the recipe!

  • 1 lb beef tenderloin filet
  • salt
  • pepper
  • 1 tbsp extra virgin olive oil
  • 1 lb baby bell mushrooms
  • 5 slices prosciutto
  • 2 tbsp yellow mustard (Coleman's brand)
  • 1 tbsp all-purpose flour (for surface)
  • 7 oz puff pastry (defrosted in refrigerator)
  • 3 egg yolks (beaten)

  • Generously season the beef filet with salt and pepper on all sides. Heat a tablespoon of olive oil in a large pan on high heat Sear the filet on all sides until well browned. Allow the fillet to cool. Once cooled, brush all sides with Coleman’s yellow mustard and set aside.
  • Then, make the mushroom duxelles. Puree the mushrooms in a food processor. Then cook the mixture in a sauté pan, allowing all moisture to be released. Once all of the moisture has boiled off, set the pan aside to cool.
  • Next, roll out a large piece of plastic wrap. Lay out the slices of prosciutto and spread the mushroom duxelles on top. Place the beef fillet in the middle, rolling the mushroom and prosciutto over the fillet. Use the plastic wrap to roll into a tight barrel shape and refrigerate for 20 minutes.
  • Meanwhile, preheat the oven to 400F. While the oven is preheating, lightly flour your surface and roll out a sheet of puff pastry to a size that will wrap around the fillet. Unwrap the filet from the plastic and place in the middle of the puff pastry. Brush the edges of the pastry with the beaten egg yolks. Fold the pastry around the fillet, cutting off any excess pastry. Brush with beaten egg yolks and chill for 10 minutes. Place the fillet on a baking pan, brush again with beaten eggs. Score the top of the pastry without going all the way through and sprinkle with coarse sea salt. Bake at 400F for 25-35 minutes or until medium rare. Allow to rest for 10 minute before slicing and serving.

Expert Tips and Tricks for the Perfect Brisket Every Time

  • Choose quality with your beef brisket. Look for choice or prime grades whenever possible. It’s great if you can go to a butcher shop near you and get a nice cut.
  • Look for marbling. Again, something a butcher can help you with but even at the supermarket, look for a brisket with fat marbling in the layers for more flavor. It is sure to make the most amazing brisket recipe.
  • Go for fresh. It’s ideal that your brisket isn’t previously frozen.
  • Use a crock pot. Brisket can be a tough cut of meat. By making this BBQ brisket recipe in a crock pot you can slow cook it until it is tender and absolutely delicious. The best beef brisket recipe is always moist and falls apart in your mouth.

How to cook brisket

Is brisket a good cut of meat?

Beef brisket is a good cut of meat for slow cooking, braised, smoking, or slow-roasting. It is not the kind of cut you’d use for making steaks as it is one of the toughest cuts of meat.

How to Cook Beef Brisket Recipe

How to cook brisket is as simple as following this recipe. You’ll be using your slow cooker, oven, and stove to make your brisket come out with the kind of taste that guests will swear came from a restaurant. I personally prefer slow cooker brisket as it is easiest and will come out incredibly tender.

How do you make brisket more tender

How should brisket be cooked?

There are many ways to cook a brisket, though the easiest way is to use your slow cooker. This recipe shows you just how to do that and get the best taste.

Should you put rub on brisket overnight?

You can, though it is fine to put it on 30 minutes before you plan on cooking it. Doing so just prior to cooking also helps you remember to let it come to room temperature first so it cooks more evenly.

Will brisket get more tender the longer it cooks

Should I sear brisket before slow cooking?

While some recipes insist upon searing, this recipe takes you straight to the slow cooker. It is afterwards that you’ll use your oven briefly to put the final touches on your beef brisket.

Should you brown brisket before slow cooking?

There is no need to brown your brisket before slow cooking. The liquids in this recipe will help ensure you make the most mouth-watering, juicy brisket.

Do you cook brisket fat side up or down

How do you keep brisket moist?

With all the juices for the BBQ sauce in the crock pot, your slow cooker brisket recipe will stay nice and moist. It will also soak up even more BBQ brisket flavor and keep from drying out.

How do you make brisket more tender?

It helps to start with a quality cut of brisket. Look for one that has marbling and is a good cut. You’ll also have to be patient when cooking beef brisket. Since it’s a tough cut of meat, brisket needs to cook at a low temperature for a long time. I recommend your brisket cook temp is the low setting on your crock pot.

Will brisket get more tender the longer it cooks?

Yes, all the connective tissues will break down, leaving you with meat that virtually melts in your mouth.

Can you overcook brisket in a slow cooker

Do you cook brisket fat side up or down?

The fat side should always be facing down when you cook brisket. This will help you achieve the perfect texture.

Can you overcook brisket in a slow cooker?

It is possible to overcook your brisket in the slow cooker. Make sure you have it on low rather than high. This allows for optimum slow cooking to render your meat juicy and tender.

How do you keep brisket moist

How many hours does it take to cook a brisket?

Because brisket is such a tough cut of meat, it needs to be cooked slow and low. Your brisket cook time should be about 9 hours for your brisket to come out perfectly tender. You’ll know your brisket is getting close to being ready when the brisket internal temp reaches 165F. However the brisket internal temperature needs to stay at that temp long enough for the meat fibers to become tender.

Does brisket get more tender the longer you cook it?

Yes, it does, and it gets more tender the longer it sits. That means the next day, those leftovers are going to taste even better!

Why is my brisket tough in slow cooker?

If your BBQ brisket is tough in a slow cooker, you’ve either selected a cut of meat that isn’t good quality, lacks marbling, or you’ve put it on high when it should be on low.

How can I make my brisket taste better?

In this recipe, we use a rub to help render even better flavor to the meat. Additionally, the BBQ sauce you’ll make with this will certainly infuse the meat with flavor you can’t miss.

What goes well with Brisket?

Brisket is amazing with coleslaw, cornbread, baked beans, corn casserole, sauteed green beans, potato salad, pasta salad, and plenty more. You’ll love this tender and delicious meal!

How to Store Brisket

Once everyone is done indulging in this rich and meaty dish, it needs to be packed up and put in the fridge. An airtight container is best for keeping it fresh.

How Long Does Brisket Last?

In the fridge, you can keep your brisket up to 4 days, unless you have it with gravy. You should try to keep the gravy separate or your brisket will only last for up to 2 days in the fridge.

Homemade brisket recipe

Can You Freeze Brisket?

Fortunately, you can freeze your brisket though again, it’s recommended to keep the gravy separate. Doing so, you’ll have up to 2 months to make use of your brisket bounty.

How to Reheat Brisket?

The trick is to keep your brisket temperature low. You’ll want to put your brisket on a baking sheet and let it come to room temperature. This lets it heat up evenly. As your brisket temp increases. Pour juices on and cover it, then bake at 325F for about 20 minutes.

First, you’ll sprinkle the meat with salt and let it come to room temperature. You’ll then preheat the oven and pat the meat dry. Salt and pepper the meat, put it bone-side down, and pop in the meat thermometer. You’ll roast it for 15 minutes to brown it, then lower the temperature and continue cooking for the designated time depending on the weight of the meat. After that, make a foil tent and let it rest. You’ll make the au jus after that and then serve it up.

Expert Tips and Tricks for the Perfect Prime Rib Every Time

  • Check the weight first. You want to make sure you cook it long enough yet not overdo things. Always double check and if you still feel nervous, you can ask the butcher when you’re buying the rib roast.
  • Save that juice. That meat juice at the bottom is how you’ll make your au jus. Don’t waste it!
  • Make sure your prime rib comes to room temperature before you start. That’s why there’s 3 hours it should sit out before you do anything beyond salting the meat. If it’s too cold in some places, it won’t cook evenly.
  • Where to find the cheapest prime rib. Prime rib can be quite expensive. Costco has good prices on cuts of beef so Costco prime rib is a great option if you have a Costco close to you.

This classic Prime Rib recipe is the perfect dish for holidays or large family gatherings. Learn how to cook a delicious and easy prime rib recipe complete with homemade au jus!

  • 4-7 lb standing rib roast
  • salt (to taste)
  • pepper (to taste)

Au Jus

  • rib roasting juices ((juices from bottom of meat pan))
  • 1/4 cup all-purpose flour
  • 3 cups water

  • First, remove the roast from the refrigerator and sprinkle generously with salt all over. Allow the roast to sit out for about 3 hours or until it has reached room temperature to ensure more even cooking.
  • Once the roast has reached room temperature, preheat the oven to 500F and pat the roast dry with paper towels. Sprinkle again generously with salt and pepper, then place into a roasting pan fat side up, bone side down. Insert a thermometer into the thickest part of the roast. Brown the roast at 500F for 15 minutes, then reduce the heat to 325F and cook for about 13-15 minutes per pound for medium rare. Once the roast has reached your desired temperature, tent with foil and allow to rest for about 20-30 minutes before carving. Once rested, cut away the strings on the roast and remove the bones, either throwing them out or reserving them for a soup. Cut into 1/2 inch thick slices across the grain.
  • Now, make the au jus. Pour the drippings from the roasting pan into a sauce pan and put on medium high heat. Once bubbling, pour about 1/4 cup of flour into the mixture, whisking vigorously to break up any lumps. Slowly add in 2-3 cups of water or beef stock, cooking until the mixture thickens. Season the gravy with salt and pepper, then put through a sieve to ensure there aren't any lumps. Serve hot over the slices of prime rib.

Here’s an easy 30-minute homemade beef stroganoff recipe that has everyone gobbling up second helpings in my house. As a kid, I remember my mom making it and I would always be so happy when she did. As an adult, I’d use those kits to help until I found out about all those artificial ingredients. When I made it myself, it tasted better and I could be confident in giving my family a truly wholesome and delicious meal. This one has become a really family favorite!

The best beef stroganoff comes from fresh ingredients. If you have only used boxed kits to make your beef stroganoff, you will soon see that going fresh is just as easy and tastes so much better.

Ingredients for making beef stroganoff

Beef Stroganoff Ingredients

  • Beef – choose a skirt steak or thinly-sliced flank steak. Sirloin steak cut into thin strips would be my third choice. If you only have ground beef on hand you can absolutely use it in a pinch to make ground beef stroganoff. When making beef stroganoff with ground beef you can follow the same instructions and simply cook the ground beef through.
  • Egg noodles – these serve as the bed for your beef. Noodles are traditional, and my favorite, but you can also use rice or polenta.
  • Mushrooms – they add a savory and earthy component to the dish.
  • Sour cream – adds that notorious tang for the beef stroganoff sauce.
  • Worcestershire sauce – the secret to the best stroganoff.
  • Dry white wine – for a hint of elegance.
  • All-purpose flour – thickens up the sauce for that rich texture.

Classic tender beef stroganoff recipe with a delicious creamy mushroom sauce in 30 minutes! This is one of my quick and easy recipes that comes out excellent every time and reheats great for next day leftovers.

  • 1 lb uncooked wide egg noodles
  • 1/4 cup butter (divided)
  • 1 1/2 lbs thinly-sliced flank or skirt steak
  • 1 small white onion (thinly sliced)
  • 1 lb baby bella sliced mushroom
  • 8 garlic cloves (minced)
  • 1/2 cup dry white wine
  • 1 1/2 cups beef stock ((beef broth))
  • 1 tbsp Worcestershire sauce
  • 3 tbsp all-purpose flour
  • 1/2 cup sour cream
  • fresh parsley (chopped for garnish)

  • Fill a large pot about 3/4 of the way with water an heat over high heat and bring to a boil. Generously salt the water and cook the egg noodles until tender. While the pasta is cooking, melt 2 tbsp of butter in a large skillet over medium high heat. Add the steak to the sauce pan, season with salt and pepper, and cook for about 3 minutes to sear on one side. Once browned on one side, flip the steak and cook on the other side until evenly browned. Remove the steak from the pan, place it on a plate and set aside. To make sure the meat is evenly cooked, you may want to cook the meat in batches to avoid overfilling the pan.
  • Using the same saute pan, add the remaining 2 tablespoons butter to the saute pan and melt over medium high heat. Once melted, add the onions and saute for about 3 minutes until they become semi translucent, add the mushrooms and saute for an additional 6 minutes and then add in the garlic. Carefully pour in the white wine and stir regularly allowing the mixture to reduce for another 3 minutes.
  • While the wine mixture is reducing, in a mixing bowl, add in the beef stock, Worcestershire sauce and flour and whisk until well combined. Carefully pour the mixture into the saute pan, stir well to combine and bring to a simmer for about 4 minutes. Next, add the sour cream and cooked steak and stir until well combined and the meat is evenly coated. Serve warm over the cooked egg noodles and garnish with fresh chopped parsley. Enjoy!

Ingredients in Beef Stew

  • Boneless beef chuck – this is the meat to use for your beef stew.
  • Potatoes – baby Yukon potatoes are best but you can use what you have on-hand. Russet potatoes are my second choice.
  • Carrots and onions – each of these adds flavor, texture, and nutrition to your stew. Some recipes call for celery although I have found in this recipe it makes little difference.
  • Beef broth – helps make the stew more stew-y. Use low sodium beef broth if you’re seeking a healthier option.
  • Red wine – an obvious requirement for any beef stew with red wine. Wine tenderizes the meat and adds more depth in flavor. I love adding Cabernet Sauvignon or Merlot for flavor.
  • Fresh parsley – the finishing touch that brings this fresh meal together.

  • Thicken to right consistency – Don’t forget the flour to thicken it up or it will be more like soup instead of stew. If you do not have flour, you can quickly use a cornstarch slurry to thicken the stew.
  • Parsley at end – Dried spices and other beef stew seasoning like the thyme in this recipe go in at the beginning, but keep that fresh parsley out of there until you’re ready to serve! Feel free to also add a few bay leaves if you like the taste.
  • Go for balsamic! – Use balsamic vinegar instead of red wine vinegar. The flavor boost is incredible.
