  • 6 cups chicken stock (divided)
  • 4 tbsp extra virgin olive oil (divided)
  • 1 lb portobello mushroom (thinly sliced)
  • 1 lb white button mushrooms (thinly sliced)
  • 2 1/2 shallots (diced)
  • 1 1/3 cup Arborio rice
  • 1/2 cup dry white wine
  • salt (to taste)

  • 4 tbsp fresh chives

  • In a medium saucepan, heat up the broth on medium-low heat. Once warmed, set aside.

  • In a skillet, the remaining olive oil and the shallots and cook for 1-2 minutes. Next, add the Arborio rice, making sure to coat every grain in oil. Once the wine is fully absorbed, being adding in the chicken stock about 1/2 cup at a time until fully absorbed. Repeat this process until you’ve used all of the chicken stock and the rice is al dente. This should take about 20-22 minutes. Once the rice is al dente, remove from the heat and add in the mushrooms, butter, chives, and cheese, salt and pepper. Serve immediately.

This easy homemade Gnocchi recipe is the perfect way to make soft and tender Italian gnocchi at home. You can then choosee between marinara sauce or pesto sauce to serve up this family favorite!



  • 2 large russet potatoes
  • 1 3/4 cup all-purpose flour
  • 1/2 cup whole milk ricotta
  • 1/3 cup fresh grated parmesan cheese
  • 1 large egg
  • kosher salt
  • black pepper


  • First, bake the russet potatoes. Preheat the oven to 400F and line a baking sheet with foil or parchment paper. Pierce the potatoes all over with a fork and then set onto the baking sheet. Bake in the oven until fork tender, or a little over an hour. Allow to cool completely before proceeding. Once the potatoes have fully cooled, slice in half, scoop out the fleshed place into a bowl. Mash the potatoes and then stir in the flour, ricotta, parmesan, a pinch of salt and a pinch of pepper.
  • Now, it is time to work the dough. On a floured work surface divide the dough into 6 equal pieces. Roll each individual piece into an 18-inch long rope that is about 1 inch in diameter. Once at the proper measurements, cut the ropes into a 3/4 to 1 inch or bite-size pieces. Roll each piece along the tines of a fork to achieve the homemade, ribbed, texture.
  • Now, cook the gnocchi. Bring a large pot of salted water to boil. Cook the gnocchi in batches to ensure the pot is not crowded. Each batch should take about 5-6 minutes. Drain well and toss in your favorite sauce.

Stromboli Dough Recipe

  • 1 1/3 cups water (110F)
  • 1 packet active dry yeast
  • 1 tbsp granulated sugar
  • 2 1/2 tbsp olive oil
  • 1 tsp salt
  • 4 cups all-purpose flour

Stromboli Filling

  • 4 tbsp unsalted butter (melted)
  • 1 tbsp garlic cloves (minced)
  • 2 tsp fresh parsley (chopped)
  • 1 lb large pepperoni slices
  • 1 lb mozzarella cheese (shredded)

Egg Wash Topping

  • 1 large egg (beaten with 1 tbsp of water)


  • First, make the dough. Whisk the warm water, yeast, and granulated sugar and allow to rest for 5 minutes. Then, add to a large mixing bowl and add the olive oil, salt, and flour until well mixed. Turn the dough out onto a floured surface. Kneed the dough until soft and bounces back after being poked. Form the dough into a smooth ball. Place the ball of dough in a greased bowl and coat all the sides with oil. Cover with a clean kitchen tool and allow to rise for an hour and half or until double in size.
  • Meanwhile, preheat the oven to 400F and line two baking sheets with parchment paper. When the dough has doubled in size, punch it down to release the air and divide in half.
  • Use a rolling pin to roll each half into a 10x16 inch rectangle. Mix the melted butter and garlic together and spread all over the dough. Sprinkle with parsley. Use 1/2 lb of meat and cheese for each rectangle, leaving a 1 inch border at the bottom and 3 inch border at the top. Brush the edges with egg wash. Slowly roll into a tight long and fold the ends under as you roll. Brush the stromboli with egg wash and cut 4 slits on top with a sharp knife. Bake for about 20-25 minutes or until golden brown. Serve plain or with marinara sauce.

  • First, set aside a large 9x13 baking dish with at least 12 cup capacity. Start with the mascarpone cream. In a medium bowl with a handheld mixer, beat the mascarpone and rum together on medium speed. Once the mixture is smooth, set aside. In another medium bowl with a handheld mixer, beat the heavy whipping cream and vanilla extract together on medium high speed for about 4 minutes or until medium peaks form. Be careful to avoid whipping the mixture into butter. Once the medium peaks have formed, fold into the mascarpone mixture.
  • Next, beat the egg whites. In a separate bowl with a handheld mixer, beat the egg whites and salt together until foamy. Once foamy, increase to a higher speed and add in 1/2 cup of sugar. Beat until stiff peaks form, then fold into the mascarpone/whipped cream mixture.
  • Next, prepare a doubt boiler for the egg yolks. Place a heat-proof bowl over a pot of simmer water on medium to medium-low heat, ensuring that the water doesn’t touch the bottom of the bowl. Use a whisk to beat the egg yolks and granulated sugar together until foamy, about 5 minutes. Once foamy, remove from heat and temper into the mascarpone mixture. Once tempered, beat with a handheld mixture on medium speed until thoroughly combined.
  • Now it is time to assemble the tiramisu. In a shallow bowl, whisk together the marsala wine and espresso. Quickly dip the 1st layer of ladyfingers into the mixture, about 2 seconds per side. Place in a single layer in the baking dish. You may need to cut a few ladyfingers to fill in any empty spaces. Once this first layer is complete, cover with a layer of the mascarpone cream, spreading it evenly with an offset spatula. Dip the remaining ladyfingers into the espresso/Marsala wine mixture and arrange on top of the mascarpone layer, gently pressing down each ladyfinger. Spread the remaining mascarpone mixture on top.
  • Sift a dense layer of cocoa powder over the top. Wipe the rim of the dish with a damp paper towel, cover and refrigerate overnight or for about 9 hours. Once chilled, slice the tiramisu into servings with a sharp knife, cleaning the knife between the cuts.
