  • Brown your chicken well. Not only does it lend a more appetizing color, but it also adds more flavor to your marsala sauce.
  • Make it gluten-free with gluten-free flour or cornstarch. I hear from lots of home cooks that are gluten-free and simply subbing the all-purpose flour with a gluten-free item will give you this same wonderful flavor without the gluten.
  • Taste the sauce before serving. If you feel it needs a little more butter, salt, or pepper, go for it!

This classic Italian Tiramisu recipe has been in my family for years. We are fanatics about Italian cuisine and this Tiramisu recipe is the perfect balance of sweet, creamy, and moist textures. Make sure you chill this one overnight because its even better the next day!

Ingredients

  • 1 1/4 cup espresso or cold brew (room temperature)
  • 7 tbsp marsala wine
  • 40 ladyfingers (Savoiardi)
  • 2 cups mascarpone cheese
  • 1/3 cup dark rum
  • 4 eggs (separated)
  • 1 cup granulated sugar (divided)
  • 2 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • unsweetened cocoa powder

Instructions

  • First, set aside a large 9x13 baking dish with at least 12 cup capacity. Start with the mascarpone cream. In a medium bowl with a handheld mixer, beat the mascarpone and rum together on medium speed. Once the mixture is smooth, set aside. In another medium bowl with a handheld mixer, beat the heavy whipping cream and vanilla extract together on medium high speed for about 4 minutes or until medium peaks form. Be careful to avoid whipping the mixture into butter. Once the medium peaks have formed, fold into the mascarpone mixture.
  • Next, beat the egg whites. In a separate bowl with a handheld mixer, beat the egg whites and salt together until foamy. Once foamy, increase to a higher speed and add in 1/2 cup of sugar. Beat until stiff peaks form, then fold into the mascarpone/whipped cream mixture.
  • Next, prepare a doubt boiler for the egg yolks. Place a heat-proof bowl over a pot of simmer water on medium to medium-low heat, ensuring that the water doesn’t touch the bottom of the bowl. Use a whisk to beat the egg yolks and granulated sugar together until foamy, about 5 minutes. Once foamy, remove from heat and temper into the mascarpone mixture. Once tempered, beat with a handheld mixture on medium speed until thoroughly combined.
  • Now it is time to assemble the tiramisu. In a shallow bowl, whisk together the marsala wine and espresso. Quickly dip the 1st layer of ladyfingers into the mixture, about 2 seconds per side. Place in a single layer in the baking dish. You may need to cut a few ladyfingers to fill in any empty spaces. Once this first layer is complete, cover with a layer of the mascarpone cream, spreading it evenly with an offset spatula. Dip the remaining ladyfingers into the espresso/Marsala wine mixture and arrange on top of the mascarpone layer, gently pressing down each ladyfinger. Spread the remaining mascarpone mixture on top.
  • Sift a dense layer of cocoa powder over the top. Wipe the rim of the dish with a damp paper towel, cover and refrigerate overnight or for about 9 hours. Once chilled, slice the tiramisu into servings with a sharp knife, cleaning the knife between the cuts.

Easy Meatball Recipe

I know making something for the first time always seems tricky. But I promise this easy meatball recipe won’t trip you up. Simply follow the instructions below and you’ll soon be a meatball-making pro!

Ingredients for making meatballs

Meatball Ingredients

  • Ground beef & Ground pork – I use both ground beef and ground pork. This ensures a nice level of fattiness without being too fatty
  • Eggs – beaten eggs help bind the meatballs together by adding enough moisture
  • Breadcrumbs – And yes, you need these too because of balance! I use plain but you can use Italian style. I recommend plain though because this recipe uses fresh garlic, parsley and basil which makes it taste so fresh and delicious!

My secret ingredient in this baked meatball recipe is ricotta cheese. Trust me, it gives these meatballs an extra-heavenly texture!

How do You Make Meatballs from Scratch

Making this baked meatball recipe is one of the easiest things you can do for dinner any night. I used to buy the bags of meatballs thinking that was an easy shortcut, but this way I know what I’m putting into it and that I’m using fresh and unprocessed ingredients.

It only takes combining the ingredients, rolling them into balls, and baking. Well, it’s a little more detailed than that, but you get the idea. Just follow my steps below and you’ll be making homemade meatballs in no time.

How to make meatballs

Expert Tips and Tricks for the Perfect Meatballs

The first time I ever made meatballs, they didn’t turn out very good at all. They fell apart and were a total mess. I think my husband only ate them to be polite. But now I know what to do. Here are a few tips:

  • Don’t mix it too much – you only need to mix everything together until it’s just combined or it will leave you with tough meatballs!
  • Keep the size the same – If not, they all cook at different rates. A scooper will help you make them one size.
  • Use pork AND beef – There are all beef meatballs and all pork meatballs, however by using a 50/50 blend of pork and beef it gives your meatballs a perfect amount of fat to make them juicy.

Megan

What is the secret to good meatballs?

Using a mixture of pork and beef adds just the right richness. A balance of moisture with ingredients plus baking over frying will also render your meatballs with a flavorful and juicy texture everyone will love.

Why do you put milk in meatballs?

In this simple meatball recipe, milk is used to add moisture to the breadcrumbs. This then renders the ingredients together and allows for light, airy, and absolutely scrumptious meatballs.

How many eggs does it take to make a pound of meat for meatballs?

You will want one egg per pound of meat. As this recipe uses a pound of ground beef and a pound of ground pork, you’ll want to be sure to include 2 eggs in your mixture.

Why do you put egg and breadcrumbs in meatballs?

Eggs and breadcrumbs bind the meatball mixture together. Some say this is for moisture, but that’s where the milk comes in so that all together, you get the best meatballs ever!

Are breadcrumbs necessary for meatballs?

Yes, breadcrumbs are a must for your best meatballs. They will bind with the moist ingredients to keep them perfectly together.

How to cook meatballs

How to Make Meatballs by Hand

Making meatballs by hand is a really fun thing to do. I like to use those disposable gloves to keep my hands from getting covered with meatball mixture. It helps me roll them too. A cookie scoop can make it easier to get the right size but you’ll want to roll them briefly in your hands to get a smoothed, round appearance.

How do you make a meatball?

All you need to do is round up the ingredients listed below, combine them without over-blending, and roll into balls. That’s it!

What makes a great meatball?

I think the mixture of the 2 ground meats is key as is adding ricotta cheese. I know most people add eggs and breadcrumbs, but ricotta makes a difference. So does fresh herbs! You can use dried, but fresh is so much better!

How do you keep meatballs from falling apart?

If your meatballs fall apart, what binds them isn’t enough. That’s why I also use the ricotta. It evens out the texture and makes all the ingredients to stay together while adding even more flavor resulting in moist meatballs.

How to form meatballs by hand

How to Cook Meatballs

There are so many ways to cook meatballs so if you don’t have time, you don’t have to bake them. You can fry them in a pan or drop them in soup or sauce. I love baked meatballs though because I can get busy with other things while they leave that drool-worthy aroma lingering around the house.

How to Bake Meatballs

This oven baked meatball recipe has a bit of fat in it which means you should make sure you line your baking sheet under your drainage rack. You’ll have much easier cleanup this way. A little cooking spray can help them from sticking to that rack too.

When cooking meatballs in the oven, keep your meatballs far enough apart. About half an inch should do it so they will all have the room they need to cook nicely. The browning from the oven adds so much flavor which results in very flavorful meatballs with restaurant quality taste.

What temp should meatballs be cooked to?

Meatballs should have an internal temperature of 160F to be cooked fully. While this recipe will ensure you get that right, you can use a meat thermometer to check them at the end of the baking time.

How do you cook meatballs without drying them out?

This recipe for meatballs includes 2 types of meats with higher fat content. Along with the other ingredients, when you bake them together, they will not dry out and will come out with a wonderful texture and flavor.

How long do you cook meatballs

Is it better to bake or fry meatballs?

Baking meatballs in the oven is better, health-wise, since you’re not using additional oil. It’s the best way to get that wonderful texture and great flavor without adding more calories and fat. Oven baked meatballs have a unique flavor without being greasy.

What to Serve with Meatballs (Side Dishes)

Meatballs are always a match with spaghetti and your favorite marinara sauce with a touch of olive oil. Though you can get rolls and make them into meatball sandwiches. A fresh salad with homemade Italian dressing, steamed broccoli, garlic green beans, or even brussels sprouts will make a nice addition to serve with meatballs.

Can you freeze meatballs

Can You Freeze Meatballs?

Yes – and that’s the best part! If you make extras, just let them cool and then put them on a baking sheet to freeze for several hours. After that, you can put them in a plastic freezer bag or freezer container. Make sure to label them with the date because they’ll be good for about 3 months and you’ll want to use them before then.

How to Reheat Frozen Meatballs

If you want to heat meatballs that aren’t in sauce, heat them at 300F in a single layer on your baking sheet. Cover them so they won’t dry out and heat until they’ve warmed through, about 10 to 15 minutes. In sauce, you can simply warm them over the stove in a matter of minutes. In a pinch, you can use the microwave but without sauce, you risk drying them out.

Meatballs are very versatile and one of my families favorite lunch dishes to make after reheating leftover meatballs is a meatball sub. Simply place a few meatballs on a sandwich roll with some marinara sauce and a sprinkle of fresh parmesan cheese.

This is the best lasagna recipe you’ll find out there because it uses fresh herbs in it which elevates the flavors. Serve it for a family gathering or just immediate family and you’re going to get lots of those “Mmmmm” sounds!

Lasagna ingredients

Lasagna Ingredients

  • Ricotta cheese – how else can you get that dreamy, creamy, cheesy filling? If you don’t have ricotta, no  worries, cottage cheese is a great substitute.
  • Marinara sauce – it’s the best red tomato sauce for the job!
  • Lasagna noodles – you can even get the no boil noodles to save some time!
  • Cheeses – you’ll need both grated parmesan and fresh mozzarella to create your cheese blend.
  • Fresh herbs – chopped parsley and basil are the best in lasagna.
  • Meat – This simple lasagna recipe calls for ground beef. If you are running low you can substitute a blend of ground beef and Italian sausage which is a delicious way to create your Bolognese Sauce. If you are vegetarian and prefer it to be meatless, you can simply omit it. Cheese lasagna is also amazing, and so is adding spinach for an extra boost of veggies.

How Do You Make Lasagna from Scratch?

Making lasagna from scratch doesn’t mean you need an Italian Nona to come help you. All you need are a few key ingredients (see below) to put together. They’re easy to find so it won’t take you long at the supermarket.

The big emphasis I want to make here is what takes it to the next level. Using fresh chopped parsley and basil makes it taste like something you’d get from your favorite Italian restaurant.

Expert Tips and Tricks for the Perfect Lasagna

  • Get the right ingredients – don’t skimp on quality ingredients for a stellar final dish. Get no-boil noodles to save some time.
  • Be careful not to over-bake – It is better to error on the side of caution and under-bake your lasagna rather than overdo it. Once its overdone there is no going back.
  • Make extra sauce for serving – lets be honest, who would turn down extra sauce on top of their lasagna.
  • Brighten your lasagna with fresh basil – if you love basil, some fresh whole basil leaves on the top of your lasagna can really take it to the next level

How to make lasagna step by step?

Lasagna step by step is very simple. You will cook your ground beef until no longer pink, mix it with the sauce, and then layer it in your pan with the noodles, cheeses, and herbs and spices. You can also omit the meat if you would like a meatless dish.

What to serve with lasagna

Do you have to boil lasagna before baking?

You will save time using noodles that are no-boil. They also make gluten-free no-boil noodles for lasagna. However, if you have the regular boil-first type of noodles, you will need to cook them and drain them first before baking.

How Many Layers Should Lasagna Have?

One box of lasagna noodles should have you at about 4 layers. However, your lasagna layers can vary if you’re using a differently sized pan. You’ll want to fit 3 lasagna noodles across the bottom and then stack it accordingly in layers until you’ve used up all the ingredients.

What do you put on the bottom layer of lasagna?

You will put the sauce and meat as the very bottom layer. If you start with your noodles, they will stick to the bottom. The sauce and meat keeps it moist. To recap, you’ll put sauce down first, then noodles, then ricotta, and repeat until you’re finished.

Lasagna baking dish

Is lasagna better with ricotta or cottage cheese?

Lasagna is definitely better with ricotta cheese. The whole milk version adds the perfect creamy, cheesy richness. If you’d like to reduce calories, you can certainly use cottage cheese instead.

Why do you add egg to ricotta cheese for lasagna?

Some recipes add egg to the ricotta cheese in lasagna. This recipe does not, as part of the fun of lasagna is when the cheesy layers ooze out in every bite.

Noodles for lasagna

Pro tip: Runny Lasagna

Why is my lasagna so runny?

To prevent the common problem of runny lasagna. You must let your lasagna rest for a minimum of 15 minutes once you take it out of the oven. This allows it to set in shape. You won’t have to do this when you reheat it but the first time you pull it out of the oven, it must sit so it can solidify.

If your marinara meat sauce is too runny, you can add one small can of tomato paste to thicken it without altering the traditional lasagna flavor.

Can you freeze lasagna

How Long Should I Bake Lasagna?

In this classic meat lasagna recipe with ricotta cheese, you should bake it covered with aluminum foil for 30 minutes. There will be 2 minutes of broiling after that to get the cheese on top nicely browned and bubbly. Once you see the top starting to barely brown your baked lasagna is ready to remove from the oven.

How long does lasagne take to cook at 200 degrees?

For this lasagne recipe, the temperature is set for 350 degrees. But at 200 degrees, the lasagna cook time will be about 45 minutes until it is bubbling and ready.

Do you cook lasagna covered or uncovered?

You will definitely want to cover your lasagna before cooking it. This keeps it from drying out, especially on top. At the end of the cook time, you’ll broil it for a minute or two to get the cheese on top bubbly.

How to reheat lasagna

What to Serve with Lasagna (Side Dishes)

Nothing goes better with lasagna than fresh garlic bread! You can also serve up a garden salad brimming with vegetables or a sautéed side dish of broccoli rabe, garlic spinach, or asparagus.

Traditional Italian lasagna

Can You Freeze Lasagna?

I love making lasagna ahead of time and stuffing it in my freezer. It’s a smart way to have a ready-to-make dinner ready to go on a busy night. Just double or even triple the recipe below and then freeze that extra. You’ll want to defrost it in the fridge overnight the day before and then simply follow the baking instructions you see below.

Lasagna baking in the oven

How to Reheat Lasagna

The absolute best way to reheat your lasagna from the fridge is by putting it in a bake-safe dish, adding about 2 tablespoons of water, and covering it with aluminum foil. This keeps it from drying out. Put it at 350F for 15 to 25 minutes until heated through.

You can also put it in your toaster oven if you’re just heating a piece for yourself. The microwave is my least favorite way but it works. Just a few minutes and it’s ready though do yourself a favor and cover it with a paper towel to keep it from making a mess.
