Ingredients

  • 2 cups heavy cream
  • 1/4 tsp salt
  • 1-2 vanilla beans (split lengthwise) or 1 tsp of vanilla extract
  • 5 egg yolks
  • 1/2 cup sugar
  • 1/4 cup sugar for topping

Method

  1. Preheat the oven to 325F. While the oven is heating, combine the cream, vanilla bean, and salt in a medium saucepan on low heat until it just becomes hot. Allow the mixture to sit for 2-4 minutes, then remove the vanilla bean.
  2. In a mixing bowl, beat the egg yolks and sugar together until light and airy. Add about a quarter of the heavy cream into the mixture. Once added, pour the rest of the sugar-egg mixture into the remaining cream and stir.
  3. Pour into 6-ounce ramekins and place in a baking dish. Fill the dish with boiling water halfway up the baking dish. Bake for between 30-40 minutes, or until the centers are still wobbly. Let them cool completely.
  4. Once cool, refrigerate for 3-4 hours. Once ready to serve, sprinkle each ramekin with a thin layer of sugar. Use either a heat gun or place the ramekins under the broiler for 2-3 minutes until the sugar melts and browns.
