Ingredients

  • 8 hard boiled eggs
  • 2/3 cup mayonnaise
  • 1/4 cup scallions (green onion) chopped (can substitute chives)
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp yellow mustard

  1. Hard boil 8 eggs and allow to cool. Once cooled, peel, chop and place into a large mixing bowl. Add in the mayonnaise, mustard, green onion, and smoked paprika. Season with salt and pepper to taste. Serve on fresh rye bread.
