Preheat oven to 350F. Over medium heat and in a non-stick pan, brown your sausage and drain the fat.
Then, combine the eggs, milk, salt, pepper, and Italian seasoning in a bowl and whisk until smooth.
Set aside 1/2 cup of the cheese for the topping. Place your veggies and cheese in a greased 9x13 casserole dish. Pour the egg mixture over the veggies and top with the reserved cheese. Bake for about 55 to 65 minutes. Serve immediately.
