Ingredients

  • 20 oz shredded hash browns
  • 1 lb crumbled sausage
  • 1 small onion diced
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 8 eggs
  • 1 12oz can evaporated milk
  • 1 tsp Italian seasoning
  • 2 1/2 cups cheddar cheese
  • salt to taste
  • pepper to taste

Method

  1. Preheat oven to 350F. Over medium heat and in a non-stick pan, brown your sausage and drain the fat.
  2. Then, combine the eggs, milk, salt, pepper, and Italian seasoning in a bowl and whisk until smooth.
  3. Set aside 1/2 cup of the cheese for the topping. Place your veggies and cheese in a greased 9x13 casserole dish. Pour the egg mixture over the veggies and top with the reserved cheese. Bake for about 55 to 65 minutes. Serve immediately.
