Ingredients

  • 2 16oz cans of yellow cling sliced peaches drained
  • 1/4 cup granulated white sugar
  • 1/4 cup light brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp lemon juice
  • 2 tsp cornstarch
Peach Cobbler Topping
  • 1/4 cup white sugar
  • 1/4 cup light brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • pinch of salt
  • 8 tbsp unsalted butter cut into pieces
  • 1/4 cup warm water
Final Topping
  • 8 tbsp white sugar
  • 1 1/2 tsp ground cinnamon

Method

  1. Preheat oven to 425F. Then, prepare the peach filling. In a medium bowl, combine the peaches, 1/4 cup white sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the peaches are fully coated in batter and then pour into a medium sized baking dish. Bake for 10 minutes.
  2. While the peaches bake, make your peach cobbler topping. Combine flour, white sugar, brown sugar, baking powder and salt in a large bowl. Then, blend in the butter until the mixture takes on a corn meal texture. Once it has reached the desired texture, stir in the water.
  3. After the 10 minutes have passed, remove the peaches from the oven. Drop in large spoonfuls of the topping and sprinkle the entire dish with the cinnamon sugar mixture. Bake for 30 minutes or until golden brown. Serve with a sprig of mint and vanilla ice cream.
