Classic Macaron Recipe

Ingredients

  • 3 egg whites
  • 1 1/2 cups almond flour
  • 1/2 cup sugar
  • 1 cup powdered sugar
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp cream of tartar
Macaron Buttercream Filling
  • 1 cup butter unsalted and softened
  • 2 tsp vanilla extract
  • 5 cups confectioner's sugar
  • 1/2 cup heavy whipping cream
  • salt pinch

Method

  1. First, make sure the almond flour is ultra-fine. You can accomplish this by sifting into a food processor, pulsing a few times, then sifting again into a bowl. Sift the confectioner’s sugar into the same large bowl. Then, add the room temperature egg whites into a bowl and whisk with a hand mixer on medium speed. Once the egg whites begin to foam, add in the cream of tartar and gradually add into the granulated sugar. Then add in the food coloring and vanilla. Beat the mixture until stiff peaks form. Once the stiff peaks have formed, begin folding in the dry ingredients gently, 1/3 at a time. The final mixture should look like wet sand. Alternatively if you can form a figure eight with the mixture without it breaking the mixture is ready.
  2. Spoon the mixture into a piping bag. Line a baking sheet with parchment paper, gluing down the four corners with dabs of the batter. Pipe one inch discs onto the baking sheet. Tap on the counter to release air bubbles, and allow to sit for 40 minutes. Once the discs have developed a skin, they are ready to be placed in the oven. Bake at 300F for 12-15 minutes.
  3. While the macarons cool, make the buttercream filling. In a large bowl, beat the softened butter with a hand mixer for about 2 minutes or until creamy. Add the confectioner’s sugar, heavy cream, and vanilla extract and continue to beat for about 2-3 minutes. Add a pinch of salt if needed.
  4. Add the macaron buttercream filling into a piping bag and pipe into the center of each macaron and cover with another macaron side to complete the dessert. Enjoy!
