This delicious breakfast casserole recipe has sausage, eggs, hashbrowns, veggies, and cheese all in one dish. This hashbrown breakfast casserole is super easy to make and is always a crowd favorite!
- 20 oz shredded hash browns
- 1 lb crumbled sausage
- 1 small onion (diced)
- 1/2 red bell pepper (diced)
- 1/2 green bell pepper (diced)
- 8 eggs
- 1 12oz can evaporated milk
- 1 tsp Italian seasoning
- 2 1/2 cups cheddar cheese
- salt (to taste)
- pepper (to taste)
Preheat oven to 350F. Over medium heat and in a non-stick pan, brown your sausage and drain the fat.
Then, combine the eggs, milk, salt, pepper, and Italian seasoning in a bowl and whisk until smooth.
Set aside 1/2 cup of the cheese for the topping. Place your veggies and cheese in a greased 9x13 casserole dish. Pour the egg mixture over the veggies and top with the reserved cheese. Bake for about 55 to 65 minutes. Serve immediately.
