This oven roasted potatoes recipe is perfect if you like your potatoes crispy on the outside and light an fluffy on the inside. This super easy side dish goes great with almost any meal and comes out perfect every time!
- 2 lbs red potatoes (chopped)
- 2 1/2 tbsp olive oil
- 2 tbsp garlic (minced)
- 2 tsp sea salt
- 1 tsp red pepper flakes
- 1 tsp black pepper
- 1 tsp smoked paprika
- 2 tbsp Italian seasoning
Preheat your oven to 400F. While the oven preheats, cut the potatoes into 1 inch cubes and allow to soak in cold water for about an hour.
Drain and dry the potatoes, then toss in the olive oil and seasoning. Bake for about 35 minutes on a baking sheet or pan until browned and fork tender.
