This is the BEST Chicken Soup recipe I've made and is a family favorite that I've been perfecting. A warm, cozy, chicken soup is absolutely perfect on a cold day to warm your body and soul. This one is full of flavor and healthy nutrients. Enjoy!
- 2 tbsp olive oil
- 4 celery stalks (chopped)
- 4 carrots (chopped)
- 2 yellow medium onions (chopped)
- 2 tbsp garlic (minced)
- 2 tbsp ginger garlic paste
- 1 tsp ground turmeric
- 1 lb chicken breast (boneless, skinless)
- 6 cups chicken broth
- 2 tsp fresh rosemary (chopped)
- 2 tsp fresh thyme (chopped)
- salt (to taste)
- pepper (to taste)
- 1/2 cup Basmati rice
- 1 cup frozen peas
In a large soup pot or stock over medium high heat, heat the oil. Once the oil is hot add in the onion, carrots, and celery and garlic. Cook until the onion is translucent.
Then, add in the 2 tablespoons of ginger garlic paste and teaspoon of turmeric. Next, add in the chicken broth, chicken breast, rosemary, thyme, salt and pepper. Bring the soup to a boil, then add in the rice. Reduce to medium low and simmer uncovered until the chicken is fully cooked. Once the chicken is fully cooked, stir in the frozen peas and cook an additional five minutes.
