This easy Egg Salad recipe is made with just a few simple ingredients and comes our perfect every time! The best egg salad is refreshing and packed with flavor. It is great on its own or to make egg salad sandwiches!
- 8 hard boiled eggs
- 2/3 cup mayonnaise
- 1/4 cup scallions (green onion) (chopped (can substitute chives))
- 1/4 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp yellow mustard
Hard boil 8 eggs and allow to cool. Once cooled, peel, chop and place into a large mixing bowl. Add in the mayonnaise, mustard, green onion, and smoked paprika. Season with salt and pepper to taste. Serve on fresh rye bread.
