This fast and easy Taco Salad recipe is a delicious dish that you can use in a snap! Whether its a family dinner or a potluck, this taco salad is a crowd pleaser. I love how healthy you can make it and its quickly become one of my favorite lunch meals.
- 2-3 tsp avocado oil
- 1 lb ground turkey
- 2 tbsp spicy taco seasoning
- 2 cups romaine lettuce (chopped)
- 1/2 cup black beans
- 1/2 cup green onions (chopped)
- 1/2 cup red onion (chopped)
- 1 1/2 cups cherry or grape tomatoes (halved)
- 1/2 cup green pepper (chopped)
- 1/4 cup fresh parsley (chopped)
- 1 avocado (sliced)
- 1 cup cheddar cheese (shredded)
- 1/3 cup sour cream
- 1/4 cup salsa
- tortilla chip strips (for garnish)
In a large nonstick skillet, heat the avocado oil on high heat. Add in the ground turkey and break up with your spatula and lightly brown. Add in the taco seasoning and cook until the ground turkey has been cooked through.
In a large bowl, assemble the remaining salad ingredients together. Toss until thoroughly combined. Garnish with additional toppings such as cilantro and jalapeno slices.
