Equipment

Ingredients

  • 2 tbsp vegetable oil
  • 1 1/2 tbsp garlic (minced)
  • 1 onion ( finely sliced)
  • 2-3 boneless skinless chicken breasts (sliced 1/2 inch thick)
  • 3 medium carrots (cut matchstick style)
  • 1 large bell pepper
  • 8 scallions (cut into 2" pieces)
  • 1 lb lo mein egg noodles
  • 1/4 cup water

Lo Mein Sauce

  • 5 tsp cornstarch
  • 2 1/2 tbsp dark soy sauce
  • 2 1/2 tbsp soy sauce
  • 1 1/2 tbsp shaoxing wine
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 1/2 tsp white pepper

Instructions

  • First, make the lo mein sauce. Whisk together the cornstarch and dark soy sauce until smooth and then add in the remaining sauce ingredients. Take about a tablespoon of the sauce and toss with the chicken to coat evenly.
  • Then, heat 2 tbsp of vegetable oil, in a wok on high heat. Once heated, stir in the garlic and onion for about 30-45 seconds. Add in the chicken, cooking for about a minute before adding in the vegetables. Cook the vegetables until the chicken has been fully cooked. Once the chicken is fully cooked, add the lo mein noodles, lo mein sauce, and water. Toss everything together thoroughly. After everything is evenly coated with the lo mein sauce, add the scallions. Serve hot, garnishing with additional scallions is optional.
