This roasted broccoli recipe is a fresh take on an old classic. Roasting broccoli is by far the best way to cook broccoli. This tender, crispy and salty version with fresh parmesan cheese is so delicious even kids love it!
- 1-2 large heads of broccoli (cut into bite-size florets)
- 4 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 5 garlic cloves (minced)
- black pepper (to taste)
- 1/3 cup fresh grated Parmesan cheese
Preheat the oven to 400F and line a baking sheet with foil lightly greased with a cooking spray. Toss the broccoli, garlic, olive oil, lemon juice, and salt in a large bowl until everything is evenly coated. Place the florets in a single layer on a baking sheet and roast for about 15 minutes at 400F. Once fork tender, toss the broccoli with parmesan and black pepper, then serve immediately.
