Steak is surprisingly easy to cook. Even if you’ve never made a steak before, or you’ve tried and had it come out with less than stellar results, you can make a steakhouse-quality well done steak temperature tonight!

  • New York strip steak – Get the good stuff! Ask the meat department at your supermarket, or better yet, seek out a butcher and ask for at least a 1-inch thickness.
  • Fresh herbs – Thyme, sage, and rosemary add to that steakhouse touch.
  • Oil – Vegetable oil or any other oil with a high smoking point is required.
  • Garlic – Peel whole cloves…no need to slice or mince.
  • Butter – I use unsalted since we’ll be seasoning the steaks.
  • Salt and black pepper – A generous sprinkling of these on both sides of the steaks will give it that taste you crave!

You’ll begin with patting your steaks to dry them off and then covering them with salt and pepper. Heat up your cast iron skillet with oil on medium high and when it’s hot, add those steaks. You will sear them for about 5 to 6 minutes on each side, taking care to sear those edges briefly to render the fat. Reduce the heat to medium and add the garlic, herbs, and butter, spooning the sauce onto the steaks often. When your steaks reach the ideal internal temp of steak cooked well done at 150F, take them off the heat and cover loosely for 10 minutes to let them rest. This is when they will rise to that proper well-done steak temp of 160F.

  • Start with room temperature steak. When you get the chill out of the meat, it will cook more evenly.
  • Choose top quality steaks. The reason you go to a steakhouse is to enjoy the meat in the most simple and pure of ways. That said, it’s best to splurge on the best quality New York, ribeye, or sirloin you can find.
  • Get the skillet hot first. This is what gives it that crispy brown crust and sensational flavor.
  • Keep from cutting. Do not cut the steaks right away! They need to rest or else they will lose their tender, juiciness.

Learn how to cook the perfect WELL DONE steak with this easy recipe tutorial! It can be a challenge to cook your steak just right so we made this cast iron skillet steak recipe that will teach you exactly how to cooking steak in cast iron to your desired temperature.

Ingredients

  • 1 lbs New York strip steak
  • 1 tbsp vegetable oil (or any oil with a high smoke point)
  • 2 tsp salt
  • 1 1/2 tsp black pepper
  • 3 tbsp unsalted butter
  • 6 cloves garlic (peeled and quartered)
  • 2 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 1 sprig fresh sage

Instructions 

  • Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  • In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest). For medium steak, the correct temperature is 160°F. So you can remove the steak when it reaches about 150°F and let it rest.
  • Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.
