This luxurious meal is as easy as it gets to perfectly achieve the temperature for medium steak. Some people find steak hard to do with overcooking but with this medium steak recipe, you’ll hit the perfect medium steak temp every time.

Medium Steak Dinner Ingredients

  • New York strip steak – The best thickness for steaks is 1-inch. You can buy it at the supermarket or go to a butcher shop.
  • Butter – I use unsalted butter because I season the steaks heavily on both sides.
  • Garlic – Peel the cloves but keep them whole.
  • Fresh herbs – Rosemary, thyme, and sage add the perfect flavor.
  • Salt and black pepper – Season both sides of your steak liberally with these.
  • Oil – When I make my medium steaks, I use vegetable oil. Feel free to use whatever oil you have on-hand with a high smoking point though.

After patting your steaks dry, season them with the salt and pepper on both sides. Heat your cast iron skillet with your oil over medium-high, then pop the steaks in when the oil is hot. Sear for 3 to 4 minutes per side and don’t forget the edges (about a minute on those). Turn heat down to medium and add the butter, herbs, and garlic, spooning that sauce over the steaks until the internal temperature is 135F. Remove from heat and cover for 10 minutes to let them rest and arrive at a perfect medium steak temperature of 145F.

  • Put your steaks out first. Room temperature steaks will cook more evenly than if you put them in the pan cold.
  • Steaks shouldn’t be covered in all kinds of sauces and things. They should shine for those beefy flavors with simple additions, so buy quality meat.
  • Turn it up. Heat makes steaks taste amazing. That oil needs to be smoking hot when you put your steaks into the skillet.
  • Allow time for rest. Steaks continue cooking after they’ve been taken from the heat. When you let them rest, they stay juicy and rise to the perfect temp for medium steak.

Learn how to cook the perfect MEDIUM steak with this easy recipe tutorial! It can be a challenge to cook your steak just right so we made this cast iron skillet steak recipe that will teach you exactly how to cooking steak in cast iron to your desired temperature.

Ingredients

  • 1 lbs New York strip steak
  • 1 tbsp vegetable oil (or any oil with a high smoke point)
  • 2 tsp salt
  • 1 1/2 tsp black pepper
  • 3 tbsp unsalted butter
  • 6 cloves garlic (peeled and quartered)
  • 2 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme
  • 1 sprig fresh sage

Instructions 

  • Pat each steak dry with paper towels and liberally season each side of the steak with salt and pepper, or to taste.
  • In a cast iron skillet, heat ½ to 1tbsp of vegetable oil on medium high heat, ensuring it coats the entire pan. Once the oil is hot, transfer your steaks to the skillet .Sear the steaks on each side for about 3-4 minutes each, or until a brown crust has formed. Use tongs to render the white fat along the sides of the steak and sear the edges, for about 1-2 minutes per side. Reduce the heat from medium-high to medium and add in the butter, garlic, and herbs. Continuously spoon the butter sauce over the steaks. Continue to baste the steaks until they are about 10 degrees away from your desired temperature (they will continue to cook while they rest). For medium steak, the correct temperature is 145°F. So you can remove the steak when it reaches about 135°F and let it rest.
  • Once the steaks have reached their desired temperature, transfer them to a cutting board and loosely cover with aluminum foil. Allow the steak to rest 10 minutes before slicing. Slice the steak into ½ to 1 inch thick strips to serve. Serve with extra butter sauce.
