  • Fresh herbs and aromatics – fresh rosemary and thyme plus ginger garlic paste are the secret to a sublime flavor. Sometimes I also like to add a bay leaf or two and sprinkle fresh parsley on top. You’ll notice I do not include oregano on this recipe. I find the blend between rosemary and thyme with the ginger garlic paste to be perfect!
  • Ground turmeric – gives it a bright color and more antioxidants
  • Frozen peas – gives it more veggie protein
  • Basmati rice – for a soup that really eats like a meal. Can substitute short pasta noodles, egg noodles, zucchini noodles, or even potatoes.

Once you do, you’ll never open another can of it (unless there’s a storm that wipes out your power and you have no choice). In one pot, you heat oil and then add the onions, celery, carrots, and garlic. Then you’ll add ginger paste and turmeric. After that, everything but the rice and peas goes in. Let it boil, then add the rice. In the last few minutes, the frozen peas go in and voila! Chicken soup from scratch!

This is the BEST Chicken Soup recipe I've made and is a family favorite that I've been perfecting. A warm, cozy, chicken soup is absolutely perfect on a cold day to warm your body and soul. This one is full of flavor and healthy nutrients. Enjoy!


  • 2 tbsp olive oil
  • 4 celery stalks (chopped)
  • 4 carrots (chopped)
  • 2 yellow medium onions (chopped)
  • 2 tbsp garlic (minced)
  • 2 tbsp ginger garlic paste
  • 1 tsp ground turmeric
  • 1 lb chicken breast (boneless, skinless)
  • 6 cups chicken broth
  • 2 tsp fresh rosemary (chopped)
  • 2 tsp fresh thyme (chopped)
  • salt (to taste)
  • pepper (to taste)
  • 1/2 cup Basmati rice
  • 1 cup frozen peas


  • In a large soup pot or stock over medium high heat, heat the oil. Once the oil is hot add in the onion, carrots, and celery and garlic. Cook until the onion is translucent.
  • Then, add in the 2 tablespoons of ginger garlic paste and teaspoon of turmeric. Next, add in the chicken broth, chicken breast, rosemary, thyme, salt and pepper. Bring the soup to a boil, then add in the rice. Reduce to medium low and simmer uncovered until the chicken is fully cooked. Once the chicken is fully cooked, stir in the frozen peas and cook an additional five minutes.
