  • 2 egg yolks
  • 3 tbsp white sugar
  • 4 tbsp butter (melted)
  • 1 1/2 cups milk
  • 2 cups flour (all purpose)
  • 2 tsp baking powder
  • 1 tsp salt
  • 5 egg whites


  • In a large bowl, whisk the egg yolks, sugar and melted butter until smooth. Add in the milk and then whisk again.
  • Sift in the flour, baking powder, and salt. Whisk the dry ingredients into the wet as smooth as possible.
  • In a separate bowl, whip the egg whites into stiff peaks with an electric hand mixer, then gently fold them into the cake batter until just combined.
  • In a small skillet, on low medium heat setting melt butter until bubbling or use non-stick cooking spray. Add your pancake batter, flipping when bubbles form over the surface of the pancake. Cook for 1 minute on the other side.

  1. In the past, we called on boxed mixes. Not anymore. Boxed mixes are great, but everything needed to make delicious pancakes already sits in our kitchen. We said goodbye to the boxed mix and haven’t looked back since. This recipe is easy! The pancakes aren’t too sweet and are lightly scented with vanilla. They are delicious AND they are easily adapted to what you have in your kitchen!
